Re: How to protect vegetables without Fridge.

For getting rid of lizards try keeping empty eggshells, or peacock feathers or curry leaves in the places or around the places they come.

I lived in Gujarat for 20 years, and we purchased rice, tur dal, tamarind on an annual purchase. For dal and rice I used to get Refined Castor oil and just warm it till bubbles come and pour it over the grains and mix well and keep. This lasted for more than two years. For tamarind after de seeding them, dry them in the sun and after every layer sprinkle salt and keep in an air tight container by spreading a sheet of news paper.

I dont know whether this tip is already there or not anyways!

Tamarind will be so dry, everytime before cooking we have to soak that in water to take its juice/paste.
I felt it as time consuming and so this idea.

I will soak a packet of tamarind in hot /warm water, salt, little curry masala/chilli powder and soak over night or ~5 hrs and then smash and store in a airtight container and will refrigerate it.

So that i can make use of it whenever needed, because I usually forget to soak tamarind before cooking and this method is helping me alot. And you know this paste tastes really really good And i will lick it once in a while...lol;-)

you can put 'vasambu' (in Tamil') "Acorus' in English also called as Sweet Flag. You can put them in your kitchen and it will not allow lizards inside.

Or you can also put 'spring onion' leaves to avoid lizards.

In this plan I want to tell the role of deep freezer. You can keep Cauliflower, Beans, Green Chilly, Green Pepper (also Red and Yellow), Cabbage, Radish, Peas, Cooked Potatoes, Turnip, Carrots, Bitter Gourd, Ladies finger and many more vegetables inside the deep freezer.
    • You can keep carrots as full size (by peeling the skin) and use them to prepare kootu.
    • While keeping green chilies keep them without cutting them.
    • For radish peel off the skin and keep as it is or cut them as per your wish.
    • Regarding greens, weed out the stem and collect the leaves, wash them. After draining the water keep them in a polyethylene cover / zip locker / food covers and keep them in the freezer.
    • You can also buy frozen vegetables for cooking.
    • We can even store lemons in the freezer for a long time. Buy lemons when they are very cheap in rate and wash them. Then cut them in small pieces and keep them in plastic covers, keep them in the freezer. When ever you want to prepare pickles, you remove the lemon pockets from the freezer and keep them 1 to 2 hours our side the fridge and let it come to the room temperature. Then you can use as per your wish.
    • You can Squeeze lemon with out adding water, pour them in the ice tray. When you want to prepare lemon juice or lemon rice you can prepare them easily by using the lemon cubes.
    • To prepare lemon juice i.e. nimbu pani add 2 cubes for one glass of water. Add sugar or salt as per your taste.:wave
