Yummy Salad Recipes!

Hi,

I need some good Salad Recipes with their different dressing options.

It would be great if these salads can include the basic fruits and vegetable options....Since its summer, so I don't think we'll be able to get lettuce, red/yellow pepper etc from every other shop....

I want to have options which can be eaten everyday and a variety in them.

Here you go: I love this salad...try it and I am sure, you'll like it too

[FONT=&quot]Ingredients:[/FONT]
[FONT=&quot]Cucumbers, Radish, Carrot, Onion, Tomato, Fresh Coriander leaves, Green Chilies[/FONT]
[FONT=&quot]Dressing: Tamarind water (half cup), Sugar (1 tbsp), Red Chili powder (half tsp), salt[/FONT]
[FONT=&quot] [/FONT]
[FONT=&quot] [/FONT]
[FONT=&quot]Method:[/FONT]
· [FONT=&quot]Strain tamarind water into a bowl. Add sugar and red chilli powder and mix well.[/FONT]
· [FONT=&quot]Cut cucumbers into thin strips and add to the bowl. Cut radish and carrot into thin strips and add all these to the bowl.[/FONT]
· [FONT=&quot]Finely slice onions and add to the bowl. Remove the seeds of the tomato and cut into thin strips. Cut green capsicum into thin strips and add.[/FONT]
· [FONT=&quot]Finely slice green chilli diagonally and add to the bowl. [/FONT]
· [FONT=&quot]Add fresh coriander leaves, salt and mix well. [/FONT]
· [FONT=&quot]Transfer into a serving bowl and serve.[/FONT]

Try this out:

Beetroot Salad:

 [FONT=&quot]Ingredients:[/FONT]
· [FONT=&quot]Beetroot - 250 gms(2 medium size)[/FONT]

[FONT=&quot]Roasted and powdered peanuts - 2 table spoons. [/FONT]

[FONT=&quot]Salt - 1/4th teaspoon[/FONT]

[FONT=&quot]fresh grated coconut - 2 tablespoons[/FONT]

[FONT=&quot]Sugar - 1/4 teaspoon[/FONT]

[FONT=&quot]Lime juice - 1 teaspoon.[/FONT]

[FONT=&quot]Coriander leaves - 1 tbsp chopped [/FONT]

[FONT=&quot]Seasoning:[/FONT][FONT=&quot][/FONT]

[FONT=&quot]Oil - 1 teaspoon[/FONT]

[FONT=&quot]Mustard seeds - 1/4 teaspoon[/FONT]

[FONT=&quot]Cumin seeds - 1/4 teaspoon[/FONT]

[FONT=&quot]Green or Red chili - 1 or 2 according to taste, slit in two. [/FONT]

[FONT=&quot]Curry leaves - 4-5[/FONT]

[FONT=&quot]Wash the beets and remove the stems. Boil 3-4 cups of water. Add the beets. Cook till done - about 10-12 minutes. Cool.[/FONT]

[FONT=&quot]Chop the beets in small pieces or in long sticks as you wish.[/FONT]

[FONT=&quot]Heat oil. Add mustard and cumin seeds. [/FONT]

[FONT=&quot]When they stop crackling, add chili pieces. [/FONT]

[FONT=&quot]Add asafetida, curry leaves. Add beet, salt, sugar, peanut powder, coconut, coriander leaves, lime juice. Mix well. Add Take off fire. [/FONT]
