I have never made any kind of dhokla's without curd. Adding sour curd makes it more softer. You don't really taste the curd when you eat it. Alternatively, if you want to put less yogurt you can try making buttermilk out of it by taking 2-3 tbsp of curd and adding water to it, leave it aside for few hours/overnight to get the sourness and you can use that too. My bro and SIL is vegan and they add curd made out of coconut milk.. although am not sure of how it really tastes.
I made my dhokla over the weekend it came out really good with good flavor.... i made everything as per the video, thank you sneha..everyone loved it i will see if i can post a pic over here.. it did really came porous, i added chilli,ginger along with chana.. and also i am thinking to add some ajwain seeds to it to reduce the upset stomach due to chana dal... and one more mistake it batter need to be in good consistency so dhokla wont be so hard even after they cool down.. but overall they came out real good...
Colour ok and yes that is the colour . The arrangement was expected in a row column matrix. God Bless us Always with more palatable Dhokla to All.
