Wow pear, seems like you're always ready with so many varieties Shanvy, you're right about masalas powders with flavor enhancers.,.. I usually make all the podis at home for 2-3 months at a time - the flavor enhancers can never beat a mix of the right garam masala items, saunf, sonth, dhaniya, jeera and pepper and chilli chitvish and krishnamma from indusladies and other websites and mom, aunts etc were my teachers when I was a new mother - now after almost 10 years, I do my own blends and powders we just have to dry-fry in right combinations and powder and store in air-tight containers
Made this item in 15 minutes yesterday and thought of updating this thread Instant steamed something that looks and tastes like Dhokla (;-)) - 1 cup besan, 1/2 cup idli rava, 1 1/2 cups curd, salt, ginger (fresh or dry), chilli (green-paste or red-powder), turmeric, 1 lemon's juice, a small pinch hing Heat a steamer filled with 1 inch water (or a pressure cooker without the weight) Mix the above into lump free paste Add 1 tsp ENO fruit salt and mix vigorously Grease a pan, pour the mixture and sprinkle lots of roasted til (sesame seeds) on top of the mixture and put it in the steamer carefully (water should be boiling by now) Close and steam for 15 minutes on high. Open the lid and get the plate out. Make tadka of 2 tsp mustard seeds and pinch of hing and curry leaves if available. Spread the tadka on top of the steamed mix with a spoon. Sprinkle some red chilli powder if you like it more spicy Cut into small pieces as you like. Add 1 tsp sugar to 4 tbsp warm water - pour it on top of the prepared dhokla to keep it soft and moist !
