can vinegar be used instead of lemon for marinating fish, is it good for health? recently i fried fish and used vinegar for marinating it, though it tasted good my guests were upset over this and said it is not right to use vinegar for cooking
It's true lemon cant be replaced with vinegar. Vinegar can be used only while cleaning fish and sometimes a few chinese fish recipes needs vinegar but not for our normal fish fry the strong smell turns off. Inspite of lemon you can use tamarind extract.
There is no harm with marinating if you do it for a shorter time. For longer time it will cook the food itself and the food becomes mushy. You can google it. I heard this from the Rachel Ray show. So I don't marinate my fish for longer.
Some people are allergic to vinegar. My mother in law used to catch a cold if she ate anything that had vinegar in it. Perhaps your guests too have some form of allergy to vinegar. Vinegar is good for marinating, but if you marinate fish for a long time, the fish is nearly cooked, some cultures eat fish that is marinated for a period of time, and not cooked.
