veggies that can be cooked and frozen

    Hi everyone,

    I need advice on what veggies can be cooked and frozen to be used on week days. I work and have a small kid, so I cant cook the previous night. Hence I have planned to cook some veggies for side dish and freeze them on weekends. I am thinking of using okra, how about potato? Could you please suggest what else can be added to the list.

    Hai sharada,
    There are alot of veggies which can be cooked and frozen.I make large quantities of sambar and freeze them in portions needed.I also cook mixed veg for avial and freeze.when u need u can defrost and add coconut,curd etc and temper.Potaoes becomes soggy if frozen but u can add to sambar and they dont make any difference.okra also i make a curry using tamrind freezes well.u can pressurcook whole potato and use it as needed keeping in refrigerator.If u plan ur menu u can cook double and freeze the extras and use up later.Hope this helps:)
