Any of these herbs works well with potatoes too. Boil potatoes till about 80-90% done. Then mix olive oil, any one herb or a mix a few, sea salt, toss the boiled potatoes. Or you can mix the whole thing without any boiling n oven roast it. It can work with any root vegetables too. Herb rice can work too. Cook Rice, then toss it in olive oil, herb, salt or toss together n cook in a rice cooker. These herbs can be used for breads, rotis, garlic bread, pizza, etc.
I had never even heard of many of the spices in this list till my first visit abroad to visit our son . Seeing so many new kinds of spices in the shops , I had good time experimenting with them . A small sprikling of any of them on Potato Roast or beans poriyal taste good . Rosemary in our tomato rasam is also good , esoecially if drinking the rasam hot , like soup .
Oven roasted potatoes with rosemary and basil taste delicious. If you make black beans then you can sprinkle oregano on top to give it authentic flavor. ( I use canned black beans for this).
Mee too, I felt like a total alien in the spice isles initially, still somewhat, though I at least know the fancy names now!
