Usage of Pressure Handi

    Hi all,
    I am planning to buy 2l a Pressure Handi with induction base. Please answer the following queries:
    1) After how much time can we safely open the lid?
    2) Can I use it for sauteeing?
    3) Can it be used as a pressure cooker? For example, can I keep separate vessels (smal ones) in it for rice and dal
    4) If I use it in an induction cooker, what time and temperature settings must be used?

    1) After how much time can we safely open the lid?

    It has an indicator that tells you when the pressure inside has gone to zero. Remember that cooking continues (without gas!) during this period. If in a hurry you can cool the handi under a tap, or by sprinkling water on it. The unit is designed so that it is not possible to open it unless the pressure inside has fallen to safe levels.

    2) Can I use it for sauteeing?

    Sauteing can take the temperature to above 200degC. If the handi is SS this is no problem. However, if it is aluminum this is unsafe as aluminum gets annealed at these temperatures over a time. This is not dangerous in itself. But if there is some unforeseen abnormal condition one can get a hazardous opening.

    It IS a pressure cooker. However, the two litre one is rather small. The quantity one can cook in the manner you describe will be small. Should be enough for two though.

    4) If I use it in an induction cooker, what time and temperature settings must be used?

    Induction hob is just a heat source, like gas or electric stove. The difference is that its efficiency is more and heats up fast. The time for cooking is irrespective of the heat source and depends on what you are cooking. The handi will come up to working pressure faster on an induction hob than on a gas stove. That is all the difference.

    Make sure that it has an induction base. Some SS cookers have a non magnetic SS base, which will not work with induction hobs.

    That s true only if the cooker ias all aluminum. Most standard cookware manufacturers now attach an induction base to all their aluminum cookware to make them usable on induction hobs.

    Prestige aluminium pressure handis dont have induction base but they have stainless steel pressure handis which have induction base.

    The outer carton will specify this.
