I'm living in India. Here even though we have maid she is highly irregular.
Please give tips for cooking..I.e vegetarian cooking using minimum utensils...so that vessels do not just pile up in the sink..the idea is even if maid doesn't turn up we can easily wash few vessels..

One pot cooking is good for that.

Like upma, khichdi, pongal, noodles, pasta, vermicili, mixed rice.
Apart from the traditional way of boiling separately, making masala / tadka separately, and then added together, it can be made in the same pot.
First do the tadka, masala, add vegetables, add adequate water, add rava, rice, noodles, pasta, vermicili - cook. It uses one pan.

Idli / dosa, n variations like Podi dosa / idli, or topped with vegetables/ cheese/ paneer.

Buy or make idli/ dosa powder, mixed rice powder / paste.

Fresh sandwiches with jam, honey, mayo, sandwich spread, sliced fresh vegetables, or any masalas can go inside it.

    One pot dishes like kichdi,
sambhar, different dals with veggies in the pressure cooker .
I also use the same pan if I stir fry something, give it a rinse , wipe and start again.

If time I not constraint , you can use my MILs method, she cooks in one kadai only for all the sabZis one after the other. Once the cooking is done , transfer to containers in which you store .

Second is my mom method , minimize the items you make , may be one Sabzi at a time.

One pot cooking is great but one may soon get bored with khichidi's or pulav's

I prefer to cook all at one time, sambar or curry, veggie or stir fry , rasam and anything else..I have all the veggies and ingredients ready and have a four burner stove and make use of the most..all my cooking gets done fast, and have time to do the dishes as soon as am done..
