Dear Latha, for rava dosa, it is best to use slightly concave tavas. Otherwise oil tendsto overflow.
OR drizzle the oil well within the outer edges of the dosai.
    Love,
    Chithra.

    Hello Chitra ji,
    Bow
    I've 2 doubts:
1)Can i grind soya along with wheat to make chaptis? What should be the ratio? Will soya cause vomitting in some ppl?

2)In milk phulka recipe,u 've said salt is optional. Is it so only for this or any phulka can be made sans salt?Or is this an option for ppl who are adviced to reduce salt intake?

Dear bindhudani, it is better to test first whether one can tolerate soya or is allergic.
To 1 kg of wheat, you can add 250 gms soya.
Salt is always optional to phulkas - you cant it down completely.
    Love,
    Chithra.

    Dear Chitra Madam:

This is responding to Ami's query on millets:

    • Pearl Millet (Hindi: Bajra, Tamil: Kambu, Telugu: Gantilu)
    • Finger Millet (Hindi: Mandua; Tamil: Kelvargu; Telugu: Ragulu; Kannada: Ragi; Malayalam: Koovarugu)
    • Barnyard Millet (Hindi: Jhangora; Tamil: Kuthiravaali; Telugu: Odalu)
    • Foxtail Millet (Hindi: Kangni; Tamil: Tenai; Telugu: Korra; Kannada: Navane; Malayalam: Thina)
    • Kodo Millet (Hindi: Kodra; Tamil: Varagu; Telugu: Arikelu; Kannada: Harka)
    • Proso Millet (Hindi: Barri; Tamil: Panivaragu; Telugu: Varigulu; Kannada: Baragu)
    • Little Millet (Hindi: Kutki; Tamil: Samai; Telugu: Sama; Kannada: Same; Malayalam: Chama)

    Dear Meena,

Thank you very much for the detailed reply on millets. I so far thought only there are 2 types of millet... raagi and the normal ones we get here in Germany. I didn't know so many varieties are available. Next time i'm in chennai will check out that shop.
