    Sowmya, my honey,
Eeyam is almost as costly as silver :-(

It will get discolured on the inside - no worries.
Do not transfer to another vessel - it is the flavour of the vessel that imparts the taste.
I buy from a shop in front of Parthasarathy Kovil in Triplicane!! They are eeya pathira specialsts. Not that they are cheap.

Hi Sumati, Follow thhis (given in my apps)
For wafers, always select fresh potatoes without any blemish, medium sized as well.
Soak in plenty of water for one hour, scrub thoroughly, wash well & peel.
Slice them directly into water in a bowl.
You can use the Salad shooter or the slicer in your food processor or a plain slicer. The slices should be thin & uniform. I used a slicer which gives a criss cross pattern.
Keep in water for 30 mtes, wash, rinsing well to remove starch.
Drain & transfert to another bowl of water.
Leave for 15 mtes & drain completely.
Dry on a towel in single layer.
Keep the oil to fry, hot & ready.
Drop the dry chips, one by one, till the surface is ¾ filled.
Turn the chips with a ladle, flipping frequently, till bubbles stop completely.
    Transfer to a kitchen tissue.
    When still fairly hot, add
    Chilli powder,salt etc.

Have you puchased a new eeya pathram or still continuing with the first one?:)
I bought my old one from the same shop you mentioned and got a decent resale value at rathna .

Now there is a eeyapathram shop in front of siva vishnu temple T.nagar as well.

    regards
    Sowmya

Yes, the taste is good, Rama. But without mada completely, I personally feel, the texture is slightly dense.

Hello Ma thanks for your reply but i have a small doubt again. Dear Chithra Mam i have some doubts regarding baking cakes. I need to bake cakes without eggs, ive seen some of your receipes but i need to avoid the eggs.Especially for the tutti fruity cake please!!!! Am not sure about flax seeds and dont know if i can give it to my little kid who is only 4years old:hide:. Can i use something else for eggs other than flax seeds? Can i use more milk and bake cake. Waiting for your reply ma.
