    Storing potatoes

    Don't store potatoes and onions together - potatoes will rot soon.

    Also to avoid potatoes from budding when you want to store for long, store an apple along with the potatoes.

    Storing or cleaning mushrooms?

    Hi Ladies,

    I want to know how to store or clean mushrooms. While I buy and store them in plastic covers in the fridge, they seem to turn brown (or) black within 2-3 days. I have got to use them immediately.

    Also, before cooking I used to put them in water for few minutes to wash off the brown color, but it makes it very soggy and gives out lots of water when I cut them.

    Tips please on handling them...

    Handling mushrooms

    Amudha,

    Mushrooms are by nature moist, so don't put them in water for washing. You need to wipe them with tissue or towel.

    To store green chillies fresh...

    Hi,

    In order to store green chillies fresh for long, remove their stems and store it in a plastic bag or container and leave it in the fridge.

    Storing pappads

    To store pappads without cracking or breaking, wrap them in a polythene sheet and store along with rice or dal.

    Ginger and Garlic paste

    Hi,

    I make my own ginger-garlic paste by grinding them together (just in one or two slow churns). I store it in a plastic container in the fridge and use it within a week to 10 days.

    But I find that they are fresh in light yellow color for the first 3 to 4 days. Later the color changes to more green, though the smell remains the same.

    While I find the ginger-garlic paste sold in desi shops remain good for long, I am not sure what is that I'm doing wrong. Should I add any preservatives?
    Please share your tips on this...

    Hello Vinu,

    Do u use water to make the paste??
    If so, instead of water use a few teaspoons of oil. It might help.

    cleaning mushrooms

    Hi Amudha,

    Mushrooms are very delicate. You should handle them softly while washing them in water and leave it on kitchen towel for few minutes.
    Now take the washed mushrooms in a bowl and sprinkle little maida, maybe a tablespoon of maida on them and shake the bowl well so as to coat the maida well onto the mushroom. this will remove dark stains on mushrooms. I always follow this procedure while using mushrooms.

    Ginger & Garlic Paste

    hi there
    whenever u make ginger garlic paste together or seperately just add a little bit of salt to it . Salt acts like a preservative . so remains fresh for a long time

    Storing Mushrooms

    Mushrooms should always be stored in a box which has a lid with holes for aeration, or else they mold.
