    Vegan Apple-Cheese Bread (1) - break monotony with everyday bread!!

    This is best eaten, lightly smeared with (non-dairy) butter.

    Shortening - 1/2 cup ( can be non-dairy butter or any vegetable shortening)

    Sugar - 3/4 cup

    Eggs - 2 - I used enerG egg replacer.

    Ground unpeeled apples - 1 cup

    Maida - 2 cups

    Baking powder - 1 tsp

    Cooking soda - 1 tsp

    Grated cheese - 1/2 cup

    Chopped nuts - 1/2 cup

    Milk, if needed

    Cream together shortening and sugar; set aside.

    Beat eggs/egg-substitutes; add apples and juice.

    Sift together flour, baking powder, cooking soda and salt.

    Add dry mixture alternately with egg/egg-substitute mixture to creamed mixture.

    Add cheese and nuts. If apples are not juicy, add a small amount of (non-dairy) milk.

    Bake in greased loaf pan in preheated oven at 180C for 1 hour.

    Vegan chocolate Quick Bread -- you will never say, ‘no, thanks’!!

    I made this last evening for my chocolacious GD, Thanu's first wedding anniversary!:-D

    Sift together:

    Maida - 2 ½ cups

    cocoa powder - ½ cup

    Baking powder - 1 ½ tsp

    Salt - ½ tsp

    To the above add:

    sugar - 1 cup

    Beat together:

    Melied (non-dairy) butter - 1/3 cup

    Egg substitute - in place of 1 egg ( I used enerGy egg replacer)

    Add this to the dry ingredients, alternately with

    (Non-dairy) milk - 1 cup + White vinegar - 1 tbsp, mixed & kept for 5 mtes.

    Transfer the dough to a greased loaf tin & bake at 180 C for 60-70 mtes till a skewer when inserted comes out clean.

    Cool, cover with melted chocolate.

    Vegan Saffron Honey Buns - a classic sweet bun, lighter than feather!

    I used maida fully & got extremely-soft buns!

    Honey - 2 tbsp

    Dry yeast - 7 gms

    Maida - 1 ¼ cups

    Wheat flour - 1 cup

    Vegetable oil - 2 tbsp

    Salt - 1 tsp

    Ground saffron - 1/8 tsp

    Dark raisins - ½ cup( cover with warm water for 30mtes to plump)

    Egg substitute - for one egg ( I used enerG-egg replacer)

    Sugar - 2-3 tbsp

    Hot water - as is necessary.

    Usual method. Once the buns have proved, brush with melted butter & sprinkle sugar. Bake at 200 C for 20-25 mtes. Makes 12 no:s.
