    Lets start this thread with something sweet and lovable. After all, SPRING, the season of LOVE, is here J

    SUGAR COOKIES RECIPE


    Ingredients:

    3 cup Fine Wheat Flour (Maida)
    1 cup Sugar
    1 1/2 tsp Baking Powder
    1/2 tsp Salt
    1 cup softened Butter
    1 Egg
    2 tblsp Milk
    1 1/2 tsp Vanilla Essence


    How to make sugar cookies:

    · In a bowl, mix flour , sugar, baking powder, salt and butter.
    · In a separate bowl beat the eggs lightly with milk and vanilla essence.
    · Add this mixture to the dry ingredients.
    · Make a dough and roll it into a ball.
    · Wrap it in a wax paper and let it chill for 1 hour.
    · When you want to make the cookies take a samll ball of the dough and roll it into a cookie by pressing the ball between two wax papers.
    · Bake the cookies at 350° for 5-7 minutes or till the cookies are firm

    I think making those cookies without eggs is going to be a difficult task. But, lets wait for Amrita’s reply.

    Let me share with you the recipe of Valentine Cookies that I learned from my younger sister! :thumbsup

    VALENTINE COOKIES


    Ingredients:

    1 roll Sugar Cookie Dough (refrigerator)
    1 can Pink Frosting
    Powdered Sugar (Cheeni)


    How to make valentine cookies:

    · Prepare sugar cookies as per the directions given on the package for rolled cookies.
    · Cut hearts in dough using a cookie cutter.
    · Cut out a heart in the center of half the cookies with a help of a knife or small cookie cutter..
    · Arrange cookies on ungreased cookie sheet.
    · Bake it in a preheated oven at 170 degrees c for about 7 - 9 minutes.
    · Spread each big solid cookie with frosting.
    · Top with cutout cookie.
    · Drizzle powdered sugar.

    Let me share with you the recipe of Chocolate Valentine Cheesecake that my sis-in-law made for my brother (Honestly speaking for all of us:cheers), this Valentine’s Day.

    CHOCOLATE VALENTINE CHEESECAKE RECIPE


    Ingredients:

    3 packages Cream Cheese (softened)
    3/4 cup Sugar (Cheeni)
    3 Eggs
    1 tsp Vanilla Extract
    2 cup semi-sweet Chocolate (divided)
    1 extra serving-size packaged Cracker Crumb Crust
    2 tblsp Whipping Cream


    How to make chocolate valentine cheesecake:

    · Beat cream cheese and sugar in a bowl.
    · Combine eggs and vanilla and mix all of them well.
    · Stir in 1-2/3 cup small chocolate chips; pour into crust..
    · Bake mixture in a preheated oven at 280 c for 10 minutes.
    · After 10 minutes of baking reduce temperature to 180 c and bake for more 30 minutes till set.
    · Remove from oven to wire rack.
    · Let it cool completely.
    · Cover it and refrigerate to chill thoroughly.
    · Place remaining 1/3 cup chips and whipping cream in a microwave bowl.
    · Microwave at high level till chips are melted and mixture is smooth when stirred, it will take about 20-30 seconds.
    · Let it cool slightly.
    · Spread over top of cheesepie.
    · Refrigerate it for 15 minutes so that topping is fully set.
    · Cover and refrigerate leftover cheesepie.

    NOTHING BUT LOVE CAKE


    Ingredients:


    1-1/3 cup all-purpose Flour
    2/3 cup Cocoa Powder (unsweetened)
    1/2 cup (1 stick) Butter (softened)
    1-2/3 cup Granulated Sugar
    1-1/2 cup Chocolate Mini Baking Bits (divided)
    1 container (16 oz) White Frosting
    1 Egg (large)
    3/4 tsp Vanilla Extract
    1 tsp Baking Soda
    1/8 tsp Salt
    2/3 cup Sour Cream
    1/4 cup Buttermilk


    How to make nothing but love cake:


    · Lubricate bottoms of a (8-inch) round cake pan and a (8×8×2-inch) baking pan.
    · With the help of waxed paper line the pan; slightly lubricate it and flour pans and set aside.
    · In a large bowl mix butter and sugar till it becomes light and fluffy.
    · Mix egg and vanilla.
    · In medium bowl mix flour, baking soda, salt and cocoa powder.
    · In small bowl mix sour cream and buttermilk; add to creamed mixture alternately with dry ingredients, beginning and ending with flour mixture.
    · Pour the prepared batter evenly in the prepared pans.
    · Drizzle batter in each pan with 1/2 cup chocolate mini baking bits.
    · Now bake it in a preheated oven at 350°f for about 35 minutes.
    · Let it cool on wire racks completely.
    · Reduce round cake into two half to make semi-circles.
    · Keep square cake layer on serving plate.
    · Place one semi-circle cake along one side of square cake.
    · Bridge the gap between them with little frosting.
    · Place remaining semi-circle cake along adjacent side of square cake, to make heart shape.
    · Bridge the gap between them with little frosting.
    · Frost the entire cake with the remaining frosting.
    · Decorate with remaining chocolate mini baking bits.
    · Store it in tight cover container.

    As Holi approaches us, let me share my Granny’s recipe of Puran Poli with all I’Lites!

    Ingredients:

    1 cup Maida
    1 pinch Turmeric Powder
    1 pinch Salt
    2 tsp Ghee
    Water enough to make dough
    6 tbsp Oil
    Oil / Ghee for frying


    Inner Filling

    1 1/2 cup Jaggery
    1 1/4 cup Bengal Gram Dal
    1/4 tsp Cardamom Powder


    Preparation:

    · Blend the ghee and masala with the maida. Using water make a soft smooth dough.
    · Leave under a wet cloth for 40-50 minutes. Knead again.
    · Put in the 6 tbsps oil and knead till completely absorbed. Cover and leave aside for 4 hours.
    · Put the dal in the cooker till one whistle. Drain the water.
    · Grind to a paste and with the jaggery and cardamom powder. The filling should not be watery.
    · Make small balls of the filling. Divide the dough into small balls and flatten them.
    · Place one ball of filling on the dough and cover and seal up the filling.
    · Carefully roll out the dough into thick puris making sure the filling does not come out.
    · Fry on a tawa pouring ghee around it. Cook on both sides. Puran Poli is ready to be served.

    The Valentine Cheesecakes were YuMMY!!! They were superhits among my friends who came to stay with me over the weekend.

    Let me share with you the recipe of Cupid Cakes that I collected from one of them!!

    Ingredients:

    10 oz frozen Strawberries (thawed)
    1 tblsp Sugar (powdered)
    2 frozen (10-3/4 oz each) All-Butter Pound Cakes (thawed)
    1/2 cup Whipping Cream (whipped)
    1/2 cup Strawberry or Seedless Raspberry Preserves

    How to make cupid cakes:

    • Drain strawberries and reserve 1 tblsp juice.
    • Combine strawberries, powdered sugar, reserved juice with whipped cream and set it aside.
    • Reduce each cake into 12 slices.
    • Spread 12 slices with about 1/2 tsp preserves each.
    • Top it with remaining slices to make sandwiches.
    • Press lightly to spread preserves to edges.
    • Pull excess preserves from edges.
    • Decorate onto serving plate.
    • Top with whipped cream mixture.

    I learned to make Mawa Gujiya from my friend, last Holi. Here is the recipe!

    Ingredients:

    2 1/2cup refined flour (maida)
    250 gm thickened milk (mawa)
    1 cup sugar
    1/2 tsp cardamom powder (elaichi)
    10-12 almond (badam)
    10-12 raisins (kishmish)
    clarified butter (ghee) for frying

    How to make mawa gujiya:

    • Fry thickened milk in a pan until it turns light brown and then remove it from the flame.
    • Grind sugar to a powder.
    • Finely chop almonds.
    • Mix sugar, almonds, raisins, cardamom powder and thickened milk.
    • Keep in mind that sugar is to be added only when thickened milk gets cooled.
    • Add 5 tbsp ghee in thickened milk and knead into hard dough with water.
    • Make small rounds of it and roll them into small chapattis.
    • Take 1 tbsp thickened milk and spread on the chapattis.
    • Put some water on the corners so as to seal them and then press them with your fingers.
    • Now heat ghee in a pan and deep fry all gujhiyas at low flame from both the sides.
    • Take them out and store the mawa gujiyas.

    Thank you so much for the recipe of Mawa Gujiya! I plan to prepare it, this Holi.

    This is how my mother makes Gathiya, every Holi!!

    Ingredients:

    1/2 kg gramflour (Besan)
    Salt to taste
    Pinch of soda bicarbonate
    Oil for frying

    How to make gathiya:

    • Seive the besan, soda bicarbonate and add salt to it.
    • Now add enough oil to the besan and salt mixture that it start forming rough balls.
    • With water, knead a tight dough and then cover it with a wet cloth piece and keep it aside for 1/2 hour.
    • Now heat oil in a kadai.
    • With the help of a gathiya maker, drop gathiya in the heated oil.
    • Fry till golden crisp.
    • Drain excess oil and soak them on tissue paper. Let them dry in open air.
    • When cool, store them in an airtight container.
