Winter seems to be much colder this year and with occasional showers too the temperature seems to have taken a dip below the normal winter temperatures. With it being cold outside a nice warm bowl of soup would be a real treat. Posting my recipe of a quick and tasty clear chicken soup. Clear Chicken Soup Recipe Ingredients Chicken Stock – 6 cups Boiled and Shredded Chicken – 200 to 250 gms Spring onions (chopped) – 2 to 3 tbsp White pepper powder– ½ tsp (I had only black pepper on hand, however, for a clearer soup it is best to use white pepper) Garlic (chopped finely) – 2 tbsp Salt to taste Sugar – ½ tsp Method for making the soup: 1-Take a deep dish and add in the chicken stock. When it comes to a boil add in the garlic and white pepper powder. Let boil for 2 -3 minutes. 2-Add in the boiled and shredded chicken, salt and sugar. Cover and let boil for another 5 minutes. 3-Add the chopped spring onions. Take off the stove and cover and keep for 2-3 minutes to allow the flavours to inter-mingle and blend well. Serve hot.
