It is a beautiful place. Stay during fall will be amazing. I have stayed at PF (not in Gattinburg) went for multiple trails through the national park, roaring fork etc. in Summer. During the stay find time to go for atleast a dinner show. It is an experience.

Fall is really beautiful in the Smokies....plan to visit between mid october to mid november and you will have a great experience. Book you cabins fast, they are extremely in demand during this period. Also some of the cabins have minimum 2-3 nights stay. Some of the cabin booking websites:
Smoky Mountain Cabin Rentals Bryson City North Carolina
Western North Carolina Cabin Rentals Bryson City Cabins Cherokee NC Vacation Rentals
Gatlinburg Cabins - Gatlinburg Cabin Rentals - Pigeon Forge Cabins
Gatlinburg Cabin Rentals, Smoky Mountain Cabin Rentals, Tennessee Cabins
For things to do around, drive on Blue Ridge Parkway, Cherohala Skyway, and visit Great Smoky Mountains National Park, Great Smoky Mountains RailRoad(Bryson City). Especially do not miss the Blue Ridge Parkway, it is extremely beautiful with fall colors and foliage.

check out Dollywood in Pigeon Forge. It's a themepark and may be a little goofy, but its a fun trip. There are rides and shows, if you are interested in that sort of thing. As the others said, take advantage of the hiking and the beautiful fall leaves. The good thing about TN is that it doesn't get too cold. Gatlinburg itself has a lot of shops geared towards tourists, but its just fun to wander around and take in the sights. It is more of a relaxing vacation rather than having to do things all day. Have lots of fun!
