Simple rice recipe( fried rice)

    Simple rice recipe (fried rice)

    For serving: 3-4 people.

    2 medium sized bowls of Boiled rice for serving 3-4 people. It should not be sticky. Leftover rice is good too as it loses some of its stickiness. ( I cook rice in a rice cooker.So I have no problems in getting the exact suppleness.)
    2-3 medium sized onions, chopped
    1-2 big carrots, chopped finely
    A few raisins (Kishmish)
    Fresh ginger+garlic+green chili paste (1 inch ginger+6-7 cloves garlic+1 green chili)
    A few whole cumin seeds
    4-5 cardamom crushed (you may use the peel of the cardamom too.)
    A few green peas, corns, ,and chopped green onion leaves( You may leave this/omit these ingredients altogether)
    1 teasspoon salt
    A pinch of sugar
    Refined Oil
    Chicken cubes/Magii Magic chicken cubes (For the non- vegetarian)
    Magii Masala (That comes with the magii noodles pack-for the vegetarian)


    In a pan , heat 1 teaspoon oil. Add the chopped onions and the kishmish.Add a pinch of salt. ( You may also add a few green peas, corns and chopped green onion leaves-ONLY If You Want To). Fry for 2 minutes or until the onions turns deep pink/light brown and keep aside.
    Meanwhile, in the same pan, heat two tablespoon of oil. Add the whole cumin seeds.Immediately add the ginger+garlic+green chili paste. Fry for 10 seconds. Then add the chopped carrots. Fry.Add the salt. Add the boiled rice. Add the Magii chicken cubes/Or, the magii masala. Mix properly. Add a pinch of sugar. Keep frying on high heat.Add the crushed cardamom seeds.Check the salt content. If it is high, add some more rice. If it is low, add some more salt. After say five minutes, add the fried chopped onions and kishmish ( that you have fried already and set aside). Mix properly with the rice.
    Remove from heat. Your dish is done.

    The secret of cooking rice for those who cook it in a pressure cooker:
    I have found the following information from a website long back, which is very useful. Sometimes, you may get different results due to the difference in the quality of rice(hard rice, soft rice ,etc.):

    1 cup rice = 2 cups water
    2 cups rice = 3 1/2 cups water
    3 cups rice = 5 cups water

    One question chicken cubes means usual chicken. Instead of Maggi masala can we use any other masala. Pls guide.

    Thanks for your visit to my blog. I will try my best to answer your query:

    By Chicken cubes, I did not mean real fresh/dried/frozen chicken pieces. There is a brand available in Indian markets called MAGGI and they sell POWDERED CHICKEN CUBES in small packets. The name is " MAGII MAGIC CUBES (CHICKEN)". If you are a non-vegetarian, use the Chicken cubes . If you are a vegetarian, use the MAGII MASALA that comes with MAGII NOODLES pack. If you do not want to use any of these then you may use ANY OTHER seasoning mix. I will give you some options:

    1. Kala namakh ( Black Salt-half teaspoon) OR

    2. Chings' Secret Vegetable Stir Fried sauce.- 2 teaspoon.

    OR

    3. Any Soup powder ( Sweet and sour/manchurian/ sweet corn chicken/any other-do not use more than two teaspoon). I use KNORR Soup Powder.

    OR

    4. Also there are readymade PASTES, COOKING MIX, MASALA available in the market. Like KNORR CHINESE RECIPE MIX (manchurian/ sweet and sour, etc.). You can use these instead of MAGII masala or Chicken cubes.

    OR

    5. You can also use any simple chicken masala or meat masala in fried rice/biriyani to enhance taste. It is easily available in the market.

    Go to the market and ask for any of this. Note down the names of the masalas and mix and ask SPECIFICALLY. They will get it for you. If possible, substitute MAGII MASALA with any SOUP POWDER. More spicy a soup powder is , tastier will be the fried rice.
