You can store moong, masoor, matki etc by adding some hing power in the bags.
Groundnut, rava, dry coconut, tamrind, kokum can be stored in fridge.

this is what i do. other than what i need for sprouts, i dry roast chana, toor, moong, moong dal, moong just a little not till it emanates flavours..this way it does not spoil..

Atta, flour i mill them in 5kgs/2 kgs depending..and always have their individual scoops..and close them immediately after taking out the required amounts. always ensure the containers are neat/dry when refiling..sometimes if you feel that the flour is getting worms or likely..just sieve them and mw the same for 1 minutes..

sooji, daliya i dry roast well and are always ready to use.

i store nuts, masalas in the freezer..

I store my flours in a fridge but I would use a freezer if I had enough room. All my masalas except those used on daily basis I keep in the freezer. You can buy in USA a separate freezer with shelves which would be very handy if you have the budget and the room in your place. Some are not very large. These are also very handy if you are stacking cooked meals in containers for cooking or reheating later.
