Let me start with My recepie with chicken:

    Ingrediants:
    chicken - 1 kg(Big peices)
    Oil - As required
Chilli powder - 2 full spoons
    Coriander powder - 1 full spoon(optional)
    Salt - as needed
Garam masala - 1/2 tea spoon
Tomato purie - 4 full spoons
Ginger galric paste - 1 full spoon

Clean the chicken, mix all the powders and pastes with that leave for 1/2 hour or more..
Take a pan which can accomedate half of the chicken at once.
Temper 4 r 5 spoons of oil put the chicken peices one by one on pan (Peices should not be over each other) , close the lid leave it for 10 mnts. After that turn the chicken peices to the other side, add some more oil if needed. Do this until the chicken get cooked. the chicken should absorb all the water content and it should get dry.. Dont add water at all..

Repeat the same for remaining also.. If you want you can add dry coconut powder also a little for the mixture.

I got this AAchi egg curry masala from the stores and invented a dish. Now it has become a hit.

In a pressure pan ,add finely chopped three big onions.Fry till brown.Add one chopped tomato and three garlics crushed.Saute well.

Add coriander powder two spoons,a pinch of sugar and little turmeric together with salt.Add Aachi egg masala powder one spoon,a ladle full of curd and a two spoons of coconut paste.saute well .Add a little water and close the lid with the weight on.Simmer for five minutes and switch off the flame.

Meanwhile boil three eggs.Cut them into four pieces each .After the steam is released ,add the egg pieces.Mix well.If it is too thick add a little boiled milk.Let it boil for a while.

This makes a fantastic side dish for rotis and sambhar sadam.

You can substitute paneer also in the place of eggs.

This was the first dish my DH made for me and it was also the first time I tasted it, and loved it.

Boil eggs, peel them and make cuts using the shell on the egg whites so that the gravy reaches inside.

Then soak some tamarind. Heat oil, add jeera and let it splutter. Then add lots of chopped onions, slit green chillies and curry leaves. Let the onion cook well till the raw smell leaves. Next add the powders, turmeric powder, red chilli powder, coriander powder and salt.

Now add the extracted tamarind juice. Taste and adjust salt and tamarind. Let it boil.

Then add the boiled eggs and lots of coriander leaves. Let it cook on simmer till the gravy is thick. :)

    Pepper chicken fry:

    Marinate chicken pieces in curd.

Fry chopped onions, green chillies and curry leaves in oil.

Add ginger garlic paste and fry well, then add little coconut paste.

Now add turmeric powder, coriander powder, red chilli powder, garam masala, salt and pepper.

Now add the chicken pieces and little water. Let it cook well till there is no water left on medium flame.

Leave it on simmer to fry well till it is dry. Garnish with coriander leaves and serve hot with rice and rasam. :)
