    Macroni with veg. Mushrooms

    Ingredients:

    1 cup macroni cooked
    2 tbsp oil
    1 onion finely chopped
    1 tsp garlic finely chopped
    2 – 4 green chilly chopped
    200 gm mushrooms sliced
    1 large capsicum finely chopped
    ¼ cup carrots parboiled
    ¼ cup beans parboiled
    ¼ cup Potatoes parboiled and squared

    Method:

    1) Heat oil; add onion, garlic, green chilly and sauté for a minute.
    2) Add mushrooms, capsicum, carrots and beans and sauté for 5 mins.
    3) Mix all the ingredients well.
    4) Add salt and cooked Macroni.
    5) Serve with tomato ketchup.

    Note: I will not eat mushrooms but it is rich in fiber and protien. So if you dont like mushrooms please avoid that and prepare this dish and enjoy.:-D

    Vegetarian hot dogs

    Ingredients:

    8 bun (long)
    2 slices of brown bread
    ½ cup soya granules
    2 medium sized potatoes
    ½ cup paneer
    1 tsp cumin seeds
    2 tsp cumin powder
    2 tsp coriander powder
    ½ tsp chilly powder
    ¼ tsp ajwain /Ommam
    2 tbsp finely chopped coriander
    1 green chilly finely chopped
    ½ tsp mango powder
    2 tbsp oil
    salt to taste
    20 – 25 lettuce leaves
    20 – 25 Tomato slices

    Method:

    Crumble bread slices and make it into fine crumbs.
    The soya granules should have been soaked overnight in water so that it becomes three times big in size.
    Place all the ingredients except oil in a mixing bowl.
    Add all the seasonings.
    Divide into eight equal portions; make shape into cylinders or like cutlet.
    Fry them till golden brown.
    Cut the buns in to two.
    Spread tomato ketchup first.
    Then spread Mayonnaise and place one leaf of lettuce.
    Now place tomato slices as per your requirement.
    Now place the fried cutlet.
    Again put tomato slices and lettuce leaf.
    Spread tomato ketchup and Mayonnaise
    Close with the other portion of bun.
    Serve with / without French fries.

    Namkeen dahila (Something like our Uppma)


    Ingredients:

    ½ cup dalia / Wheat rava
    ¼ cup whole moong dal
    2 onions, finely chopped
    1 cup seasonal vegetables (e.g. carrots, peas, beans for winter)
    3 cups water
    ¼ teaspoon cumin seeds
    Salt to taste

    Heat a little oil in a pressure cooker. Add cumin seeds till they crackle. Put onions and the seasonal vegetables. Add dalia and moong dal. Fry a little. Add 3 cups of water. Add salt. Close the lid and cook till two whistles. This is good for the people who don't like sweet dalia.

    Pumpkin, tomato & coconut soup


    Ingredients:

    400 gm pumpkin, peeled and chopped
    4-5 tomatoes, chopped
    2 cups (200 ml) water
    1 onion, diced
    3 cloves garlic, crushed
    1 tablespoon oil
    1 cup fresh chopped basil /Thulisi leaves
    1 teaspoon ground black pepper
    2 cups coconut cream

    Heat oil in a non-stick pan.
    Put onion and garlic in oil.
    Add pumpkin and brown all over.
    Add tomatoes, basil, pepper and water and bring to boil.
    Simmer covered for 20 minutes until pumpkin is soft.
    Add coconut cream and blend.
    Serve hot with crusty bread rolls.

    Moong ki subji

    Ingredients:

    2 cups sprouted moong, boiled
    3 onions, chopped
    3 tomatoes, chopped
    1 sp cumin seeds
    ¼ teaspoon mustard seeds
    ¼ teaspoon turmeric powder
    ¼ teaspoon chilly powder
    ¼ teaspoon garam masala
    A pinch of asafetida
    A pinch of sugar
    Coriander to garnish
    Salt to taste
    2 sp oil


    Method:

    Boil sprouted moong and keep aside.
    Heat oil in a pan.
    Add mustard seeds till they crackle.
    Then add asafetida and cumin seeds.
    Add onions and cook till they turn golden brown.
    Add tomatoes and cook till all the water evaporates.
    Then add turmeric powder, chilly powder and garam masala.
    Cook for 2 minutes and then add boiled sprouted moong.
    Add salt and sugar and cook for 5 more minutes.
    Garnish it with coriander and serve it with chapatti or rice.

    Note: If you want you can add garlic in this dish.

    Iron rich Gur ka keer

    Ingredients:

    ½ cup basmati rice, soaked for half an hour
    1 litre milk
    Jaggery to taste.

    Method:

    Boil milk till it thickens. Add rice and cook till rice is done. Add jaggery and bring to a boil.

    Sweet Dhalia / Wheat rava

    Ingredients:

    ½ cup dalia
    2 cups milk
    1 cup water
    1 cardamom
    Sugar to taste

    Method:

    Roast dalia and put it in a pressure cooker. Add water, milk, sugar, and cardamom to it. Close the cooker and let it cook till it gives two whistles.

    Fruit chat

    2 cups Fresh fruits (guava, apple, chickoo, banana, oranges)
    ½ teaspoon chaat masala
    ¼ teaspoon sugar, finely powdered
    ½ teaspoon tamarind chutney
    1 spoon lemon juice
    Two drops of honey

    Wash the fruits properly.
    Peel them and cut them into small pieces.
    Add chaat masala, sugar powder, tamarind chutney, lemon juice and two drops of honey. Mix them well and serve.
    This serves as a very nutritious snack.

    Dal Palak

    Ingredients:

    ½ cup dal (yellow moong / thur dal)
    1 bundle palak
    1 onion, chopped
    1 tomato, chopped
    3 garlic cloves, chopped
    ¼ teaspoon cumin seeds
    ¼ teaspoon turmeric powder
    Salt to taste

    Method:

    Wash palak properly, preferably with hot water.
    Boil palak and dal together along with salt and turmeric powder.
    Heat oil and add cumin seeds.
    Allow it to crackle, and then add onions, tomatoes, and garlic.
    Add the boiled dal and palak to the pan and bring it to a boil.
    Garnish it with coriander and serve it either with chapatti or rice.
