secret of yummy chats

    want to know secret of yummy chats? lets know those r tamarind chutny, pudina chutny and chaat masala. For tamarind chutny soak 250 gm tamarind for 5-6 hours and extract pulp by rmoving threads and seed. In a large deep vessel pour tamarind pulp with 1kg jaggary, 250gm crushed dates or 1/2kg sugar and keep on fire. To clean jaggary soak it in a little water and make a syrup by placing on fire for 5 minutes and filter it and then add with tamarind pulp. Keep stirring and let boil nicely for 1/2 an hour at medium heat till it thickens little. Now add 1.5 t.spoon black or rock salt, 1 t sp. red chili powder, 1.5 t sp. roasted and powdered jeera, 1/2 t sp. garam masala powder, 1.5 t sp. chaat masala powder and salt to taste. Cook for another 10-15 minutes. Let it cool and store in bottles for a long time up to 6 months.
    Pudina chutny----- Take 1 bundle pudina leaves and 1/2 bundle coriander leaves, 2 green chili, 1.5" ginger and grind well add half lemon juice and salt to taste.
    Chat masala is very easy to prepare by mixing equal quantity of all the masala added in tamarind chutny. this masala can be used for all kinds of chat, dahi vada, raita and mixture of chiwda and peanuts.
    So how's that? let's tell me what kind of chat u people want to eat?????/

    dear friend,

    Thanks for the yummy chutneys receipy. But what about the chat masala. You said to add all the masalasa added in tamarind chutney. That is little confusion. Do explain please.

    I mean mix black or rock salt, common salt, red chili powder, roasted and powdered jeera, 1/2quantity garam masala powder and readymade chat masala powder in equal quantity and use this masala for any type of chaat, dahi vada, raita and fried chiwda or any type of home made namkeen. For any other query of chaat ask me.

    hi, very nice chutneys,sorry a little suggestion when i make chaat masala i add a little powdered asafoetida [hing].it tastes yummy.

    Previously i wrote the receipe of tamarind chutny, pudina chutny and chaat masala. Now take 250 gm maida, add two big spoon oil, 1t spoon ajwain and salt to taste. Kneed a tight dough. Divide in two equal portions. Take a portion and roll a thin big chapati and cut small monaco biscuit size rounds. with fork make few of wholes and deep fry. So what uhave made do u know? these r PAPDI. Now boil potatos, peel and chop small pieces. beat fresh curd in a bowl at medium thick ness. In a serving plate dip papdi in curd and place in a round shape.
    sprinkle choped potatoes, again little curd, then green chutny and tamarind chutny. sprinkle chaat masala and coriander leaves. And finaly bhujia sev. So fatafat make ur ymmy chaat and say wow....:thumbsup
