Sure shravs. Ingredients : 1cup rice( red / white) ½ cup freshly grated coconut 3-4 tsp jaggery fenugreek seeds ¼ tsp salt as per taste Slow cook the rice in open vessel with 1:8 /9 cups of water ( add salt ) . Meanwhile ,grind methi and coconut to fine paste. Once rice is cooked well and almost paste like add the ground paste and mix well. Add more water if needed. Mix jaggery at the end . Ready to serve. Add ghee while you serve. Note : You can pressure cook rice with salt. Add some water in open vessel mix the boiled rice to this and bring to boil. Now add ground paste and continue....
Amma used to prepare similar and call it ganji oota... She used to prepare it with akki nuchhu, in its absence with rice.... Amma used to cook rice soft, to that fine paste of fresh coconut,green chilly, coriander leaf and cumin seeds... Next goes salt and since this is ganji oota, needs to be little mushy.... One of my fav simple recipes.... Will try your version archu, it’s different than ours....
Thanks Nandu Ganji has many variations. Its the most simple yet most fulfilling food. My grand mom made this compulsorily once in 15 days. Its made everyday in many places of Mangalore even today. My grand mom made many variations of Ganji. Each one equally tasted well. Midi uppinkai and Rice porridge is heaven.
Delicous !!!This is the ultimate comfort food. We make it with just rice , water and salt . Served with a side of middi pickle / tindora pickle or salted lemon pickle and life is sorted . The addition of jaggery is interesting.
