count me in. :cheers We never miss to prepare this sweet basil seed sharbat for iftaar. It helps to cool the body heat and fixes dehydration problem caused by roza. Wash and soak the basil seeds in water along with sugar when u wake up for sehari. later in afternoon add milk to it and rose essence or rooh hafza and few strands of shredded almond if available and keep in fridge for 2 to 3 hrs. relish after iftar. You can also add ice cream on top. Another way to do is, skip milk and add lemon juice to the soaked basil seeds and sugar. Basil seed lemonade is ready:thumbsup

shikampur kebab: ( A kebab made with mutton and hung curd as its filling) ingredients: for the mutton mix: > 1/2 kg boneless mutton pieces > 3-4 onions sliced > 1/2 cup garlic cloves > hara masala ( green chillies, coriander leaves, mint leaves) > dry spices( red chilly pwdr, salt, turmeric) > whole spices (shahee jeera, elaichi, clove and cinnamon) > 2 tbsp oil > 100 gm roasted peanuts > 50 gms roasted coconut > 100 gms soaked chana daal > juice of two lemons for the filling > 1 cup hung curd ( it should have no moisture left) > very finely chopped onions > salt > a dash of lemon juice METHOD: > in a pressure cooker put all the ingredients metioned for the mutton mix except lemon juice, peanuts and coconut. > with very little water say 1/2 cup, pressure cook on a slow flame for 4 to 5 whistles or till the mutton is crushed, > after pressure cook, open the lid and dry all the extra water from the mix on high flame while continuously mixing. > let the mutton mix cool, meanwhile grind peanuts and coconut in a fine powder, but dont add water. > as mutton cools, add peanut-coconut powder and lemon juice to the mutton, the mix should not be sticky but like a dough. >mutton mix is ready > now for the curd filling, mix finely chopped onions,lemon juice and salt in the curd with light hands. KEBAB: > take a small portion from the mutton mix and flatten on the palm, put a spoon of curd filling and with a little more mutton mix make a small patties. > shallow fry the kebabs with a little oil on a tawa till they are crisp and brown. > shikampur kebabs are ready, serve with any chutney.
