    Dear Friends,

    Have you ever made smoothies for the children? Trust me, kids love smoothies, especially in summer. Here is a recipe for all of you::

    FRUIT and YOGURT SMOOTHIE

    Ingredients:

    • 1/2 cup of your child's favorite fruit, such as peaches, bananas, pineapples, strawberries, mangos, etc.
    • 3/4 cup of yogurt
    • 1 cup milk
    • 1 tablespoon sugar (optional)

    Preparation:

    Peel the fruit, if appropriate, and cut them up into small pieces.

    Put all of the ingredients into a blender and puree them together until smooth.

    Pour into a chilled glass and serve with a straw.

    Keep in mind that you may have to add ice or use frozen fruit if you really want to serve it cold. Also, a banana may be needed to get the smoothie to the right consistency (thick and creamy).

    This recipe is awesome. I think everyone of whom who read it will be thankful to you. This can help us add fruits and milk in the diet of kids.

    I can share some ideas with you:

    If your child doesn't like this fruit yogurt smoothie recipe, or in order to offer some variety, you might consider:
    • using ice cream instead of yogurt, although then you basically have a milk shake and not a smoothie
    • making a soy smoothie using soy yogurt and either soy milk (or rice milk) instead of cow's milk and regular yogurt if your child has a milk allergy
    • using 100% fruit juice instead of milk and yogurt. If you use orange juice that is high in calcium, this smoothie becomes a good way for kids with milk allergies to get their calcium.
    • using honey instead of sugar
    • adding peanut butter to add more protein to your smoothie (goes best with a banana as the other main ingredient).

    It can also be fun to let your kids choose their own mix of ingredients, such as orange juice, strawberries and a banana, that go into the smoothie

    Thank you Madhuja!! The ideas are good and appropriate!! Smoothies indeed help in making children eat milk and fruits. But, although smoothies are a good source of calcium, vitamins and minerals, they have high contents of fat and sugar.

    For solving this negative and making smoothies a totally healthy option, we can

    • use nonfat yogurt
    • use skim milk
    • use an artificial sweetener
    • add a supplement, such as Pediasure, to get more vitamins, minerals and calories into your smoothie
    • keep the skin on when using fruits like apples and pears to get extra fiber into your smoothie

    Smoothies sound awesome!! I am sure kids are going to love them!! We loved to eat Fruit Yogurt when we were young.

    This is how my Mom made it::

    Ingredients:
    150 gms seasonal fruit (finely chopped or pureed)
    300 gms curd, whisked (not sour)
    powdered sugar to taste

    Method:
    1. Add the fruit to the curd and mix well, reserving a few fruit pieces or a tbsp or puree for decoration.
    2. Sprinkle in powdered sugar if necessary.
    3. Pour into small containers and chill for atleast an hour.
    4. Serve chilled.
    5. Decorate with reserved fruit pieces or a dot of puree on top.

    Hi Friends,

    Baishaki is just round the corner! Let me share with you the recipe of Achari Mutton:

    Ingredients

    4 Onions
    4 Tomatoes
    800 gms Boneless mutton
    ½ tsp Turmeric powder
    1 tsp Mustard seeds
    1 tsp Kalonji (onion seeds)
    5 Cloves
    1 tsp saunf (fennel seeds)
    1 tsp Red chili powder
    2 tbsp Ginger
    2 tbsp Garlic
    ½ cup Coriander (chopped)
    8 Whole Red Chillies
    1/2 cup
    7 tbsp Mustard Oil
    Salt (according to taste)

    Method:

    1. Wash and cut the mutton into small pieces
    2. Chop onions and tomatoes.
    3. Roast the whole spices separately. Grind them altogether.
    4. Add the chopped ginger-garlic in a kadahi with heated oil in it. Add coarsely ground masala powder.
    5. Keep stirring all the time.
    6. Add mutton to it and cook it on high heat till the time it turns brown.
    7. Add tomatoes, red chilli powder, salt, turmeric powder and mix it well.
    8. Cook till the time oil leaves the masala.
    9. Add about 3 cups of water, bring it to a boil and cover.
    10. Cook it till the time mutton is fully done.
    11. Put coriander leaves on its top and serve hot.

    As Baishakhi is just round the corner, let me share with you the recipe of Coconut Laddoo!!


    Ingredients

    1 cup suji (semolina)
    1 1/2 cups grated fresh coconut
    1 tin Milkmaid
    1 cup caster sugar


    Method:

    1. Roast suji in a round vessel and when it starts turning light brown take it out and keep aside.
    2. Add atleast one cup grated coconut to the semolina and keep the mixture to cool down.
    3. Keep rest of the grated coconut to wrap the laddoos.
    4. Put caster sugar after a while and add ¾ tin condensed milk. Mix well.
    5. Make small balls of the mixture.
    6. Roll the balls in the coconut powder.
    7. Place it in the refrigerator.
    8. Laddoos are ready to serve.

    My mom makes delicious Saag Meat for Baishakhi. Let me share the recipe with you.

    Ingredients:
    500 gms Mutton
    1 Bunch spinach leaves
    2 tbsp Tomato puree
    3 tbsp Oil
    Salt (according to taste)

    For Paste
    3 Onions
    ½ - 1 Garlic
    1-1/2 tsp Ginger
    1 tsp Coriander powder

    For Powder
    1 tsp Khus khus
    1/2 tsp Chilli powder
    1 tsp Cumin powder
    Garam masala

    Method:
    1. Boil spinach leaves and grind to make fine paste.
    2. Fry onion till it turns golden brown.
    3. Now add garlic and ginger paste and fry for about 2 to 3 minutes.
    4. Put the mutton and add khus khus, chilli powder and salt.
    5. Cook mutton on low flame till it turns light brown.
    6. Now add cumin powder, tomato puree, coriander powder and the ground spinach.
    7. Cover for a while. Keep a check and do not let mutton stick to the vessel.
    8. Turn off the gas when the mutton is well done.
    9. Sprinkle some garam masala.
    10. Serve with plain rice.

    I love the recipe of Coconut Laddoo. I plan to make it tomorrow.

    Last year I had delicious Dry Fruit Kheer at my friend’s place. Her sister shared the recipe with me.


    Ingredients


    1 litre Milk
    3/4 cup Sugar
    15 strands saffron crushed, soaked in 1 tsp. hot milk
    1/4 tsp. Cardamom Powder
    10-12 Almonds slivered
    10-12 Pistachios, slivered
    5-6 Dried Peaches (quartered)
    5-6 dried Apricots, nut removed, broken to bits
    10-12 Raisins
    10-12 Currants

    Method

    1. Soak raisins, currant, peaches, apricots, in hot water for 10 minutes.
    2. Boil milk with cardamom, saffron and sugar for 10 minutes.
    3. Drain the previously soaked dry fruit, add to the boiling milk, and stir gently.
    4. Simmer, stirring occasionally, for 5 minutes.
    5. Add almonds, pistachios, and take off from fire.
    6. Serve hot.

    Dahi is very good for health in summer. There is nothing like a small bowl of Dahi after lunch, during the scorching summer months. It is very helpful for the kids and the aged.
    It can be consumed by those who are otherwise allergic to dairy products.

    This is how we can make Dahi at home::

    Ingredients:

    1 litre Milk
    1 table spoon curd (yogurt)



    Instructions:
    1. Boil the milk in a heavy sauce pan .
    2. Once it boils let it cool down a bit to a warm state.
    3. In a cup take some of this warm milk and add the yoghurt and stir it well.
    4. Place it in a warm place for overnight or for 5-6 hours atleast. During the setting period do not move the container at all.
    5. Once it is done trasfer the container to refrigerator.

    I have tried some of these recipes and found them excellent. Now adays whenever I am in the mood for some new dishes, I just log onto indusladies.
