    soya kothukari/ Minced curry

    Hi Friends,
    This recipe i read it in some blog longtime ago and i love it.
    I feel this dish as a good substute for non veg lovers on auspicious day/Month.

    Ing:
    Soya granules- 1 cup
    You can also use Soya chunks, boil for 10-15 minutes , squeeze the water, grind in to coarse granules.

    Onion -1 finely chopped
    Tomato -1 finely chopped
    Ginger Garlic Paste -1tspn
    Chilli Powder - 1tspn
    Dhaniya Powder - 1tspn
    Haldi
    Salt - acc to ur taste
    Oil - 2 tbspn
    Cliantron for garnishing

    Soak the Soya granules in hot water about 10-15 minutes, squeeze the water and keep aside.
    Heat the oil in a kadai and add the onions , saute it for a minute and add the ginger garlic paste.
    Add all the masala powders one by one and stir well.
    Add the squeezed soya granules and stir well.
    Add the salt and stir well
    simmer the stove and Close with a lid until it is cooked say for 5 min.
    Add the tomato, cliantron and stir well
    simmer the stove and Close with a lid until tomato is cooked say for another 5 min.

    Your soya minced curry is ready to serve with chappathi/rice.

    Guntur recipe for Kakarakaya-ullikaram/stuffed bittergourd or stuffed karela???

    Hi Ladies,

    I heard many recipes from many people for Kakarakaya-ullikaram????Can people from Guntur/or any place who have idea how to prepare this recipe.I know people from guntur make many excellent dishes using ullikaram.
    The Basic recipe which i prepare is grind onion,cumin,garlic,coconut,roasted channa dal(putnala pappu),red chillies ,ginger and salt to smooth paste .Make slits in kakarakaya(Bittergourd),stuff tihs stuffing and cook .But iam not happy with this recipe of mine.It wont taste like the one which i tasted in my friend's place .

    Can anyone post ur recipes for this curry!My friend is pregnant and she too loves this curry a lott!I want to give my best to her and surprise her!

    try this site Flavors of Indian Rasoi: Kakarakaaya Ullikaram Kura.

    I dont use water as said at this site (just sprinkle a little to avoid being burnt) since water enhances bitterness. Also I use dry tamarind powder to add sour taste and a pinch of bellam (brown sugar)

    I dont know if this is how guntur residents make stuffed kakarakaya since i am from hyderabad:)

    I alos make hummus at home, but i am not satisfied with the taste in imparts, i want to know if u can suggest which brand of tahina we should use then possibly i may get the desired taste

    ARABIC FOOD! Tabouleh

    Tabouleh is a salad like no other. Made with fresh veggies, olive oil and spices, it can be eaten in pita bread, scooped onto pita bread, or traditionally with a fork. In the Middle East, fresh grape leaves are used as a scoop. Tabouleh can be made with a variety of veggies according to taste. You can add carrots, cucumbers, red or green onions. I always suggest to taste as you go along in preparation. Yo can also add romaine lettuce for a fuller salad.
    INGREDIENTS:

    • 2 bunches of fresh parsley (1 1/2 cup chopped, with stems discarded)
    • 2 tablespoons of fresh mint, chopped
    • I medium onion, finely chopped
    • 6 medium tomatoes, diced
    • 1 tablespoon salt
    • 1/2 teaspoon black pepper
    • 1/2 cup bulghur, medium grade
    • 6 tablespoons lemon juice
    • 6 tablespoons extra virgin olive oil
    • Romaine lettuce or grape leaves to line servicng bowl (optional)
    PREPARATION:

    Soak bulghur in water for 1 1/2 to 2 hours in cold water until soft.

    Squeeze out excess water from bulghur using hands or paper towel.

    Combine all ingredients, except for salt, pepper, lemon juice, and olive oil.

    Fattoush is a popular salad, especially in Lebanon. The great thing about fattoush is that you can add and delete veggies from the recipe according to taste.

    INGREDIENTS:

    • 5 cups toasted pita bread, torn into 1 inch pieces
    • 2 tomatoes, diced
    • 1 cucumber, diced
    • 1/4 cup parsley, chopped
    • 1/4 cup green onions, chopped
    • 1/4 cup green pepper, diced
    • 1 half head of romaine lettuce, torn into small pieces
    • 3 cloves garlic, crushed
    • 1/2 cup lemon juice
    • 3/4 cup olive oil
    • 1/4 cup fresh mint, chopped
    • salt and pepper to taste
    PREPARATION:

    For the Salad

    In a large bowl, combine lettuce, bread, cucumber, tomatoes, green peppers, onions, and parsley together. Toss together.

    For the Dressing

    In a small bowl combine garlic, olive oil, lemon juice, and mint. Mix well.Pour dressing over salad and serve.

    Variations

    You can add many spices to this according to your tastes. Some people like to add chick peas for a heartier salad.

    Serve 4 large salads or 6 side salads.

    Hi,

    My husband likes the Goan Dish Bibinca.He told me it is like a cake. It seems his friend used to bring it to hostel.'

    I would like to have the recipe, so that I can surprise him one day by making it for him.

    Basmati Rice.

    Hi all…

    Can anyone help me out in preparing the Basmati rice.
    What shud be the ratio of water & rice so that rice doesn’t stick to each other.
    Also pls suggest the best brand of Basmati rice.
