Rasams- the tongue ticklers !

    Hello Chithra

    Mor rasam seems to be different. Will give it a try.

    Just a doubt...I have noticed that coriander leaves is not included in the ingredients which is a must for any kind of Rasam. Any reason? Please clarify because I will try this recipe soon.

    Dear Lakshmi,
    Coriander leaves are not a must for buttermilk & hence not included.
    you can use it if you believe in that flavour so particularly !

    Kandanthippili Rasam - a medicinal rasam.

    Ideal for body pain, fever, cold etc.

    Tamarind - 2 tsp

    Salt

    Lightly roast & grind to a paste:

    Pepper - ½ tsp

    Kandanthippili - 4,5 pieces

    Red chillies - 2

    Dhaniya - 1 tbsp

    Gram dhal - 1 tsp

    Grind separately:

    Jeera - ¾ tsp

    Fresh curry leaves - few

    To temper:

    Ghee - 1 tsp

    Mustard seeds - 1 tsp

    Mix first paste, tamarind paste, salt & 1 cup of water

    Boil for a few mts.

    Add 2 cups more water & second paste.

    Remove when it starts foaming.

    Temper as given.

    This can be mixed in a vessel, kept inside a pressure pan & cooked for one whistle.

    5,6 flakes of garlic can be roasted along with the ingredients of the first paste if you like & the taste will be very good.

    It is a country herb.

    It is in the form of small sticks, 2-3 '' long & just 2-3 mm thick. It is available in country medicine shops.

    Garlic Rasam - a great favourite !

    Peeled garlic pieces - up to 1 cup ( or to your taste)

    Tamarind paste - 1 tbsp

    Salt, haldi

    Fry in ½ tsp oil:

    Red chillies - 3,4 (or to taste)

    Pepper - 1 tsp

    Dhaniya - 2 tsp

    Kandanthippili - 4,5 one inch pieces (if available, or omit)

    And grind with Raw jeera - ½ tsp

    To temper:

    Ghee - 1 tsp

    Mustard seeds - ½ tsp

    Curry leaves - few

    Mix garlic pieces, tamarind paste, salt & haldi with 2 cups of water in a vessel.

    Keep this vessel inside a prssure pan & cook for one whistle.

    Cool, open add the ground paste & add enough water to make up the required quantity of rasam.

    Keep inside the pressure pan again & cook for 1 whistle.

    Cool, open & temper.

    Note:

    Kandanthippili is a medicinal drug available in shops which sell “country medicines”. It is supposed to relieve one of body pain & tiredness.

    Dear Mrs Chithra,

    I put in my request for poondu rasam at 4.28 and by 4.33, you have posted it. Are u a mind reader? Is telepathy among yr many,many talents?

    My husband loves this rasam and can make a meal of it.

    Feel sorry for myself, since I am fasting today, especially after seeing the yummy pizza photo and garlic rasam recipe.

    Minestrone Soup - the meal-in-one soup.

    Macaroni - ½ cup

    Garlic - 2 pieces – crush

    Butter - 2 tbsp

    Grated cheese - 1 tbsp

    Tomato sauce - 2 tbsp

    Peas - ¼ cup

    Salt, pepper

    Chop into small cubes:

    French beans - 10

    Leeks - 2

    Celery - 1

    Tomato - 1

    Onion - 1

    Chop into slightly big cubes for the stock:

    Carrot - 1

    Potato - 1

    Onion - 1

    Chopped cabbage - 2 tbsp

    White pumpkin - seven or eight 1” cubes

    For the stock, boil vegetables with 5 cups of water in a pressure pan for 3 whitles.

    Cool, open & liquidise.

    Heat butter in a pressure pan.

    Fry onion first & then add crushed garlic.

    Add all other vegetables, stock, salt & pepper.

    Close the cooker, put weight & cook for one whistle.

    In the meanwhile boil macaroni separately in 2 cups of water with 1 tsp oil & a pinch of salt

    Drain & add to the cooker as soon as it is opened.

    Adjust to the desired consistency.

    If you cannot get leek & celery, you can omit them – but they do give a characteristic flavour.

    Add tomato sauce & grated cheese.

    Serve hot.
