Re: Rajasthani Recipes- dal dhokli Hi all A simple one step meal of Dal dhokli - Dal dhokli A complete meal . Taste delicious in winter or rainy season Ingradients - Wheat floor 300gms , Pure Ghee Two table spoon ful,pinch of soda bicarb, Salt to taste,Carum seed 1/4 teaspoon ful Green moong dal 1 cup, 1/4 cup yello chana ( gram ) dal Salt ,Red chilli powder Termeric powder For Tadaka – Two cloves , Ginger garlic paste one teaspoonful Cumin seeds ¼ teaspoonful Asfoetida powder one pinch Garam masala Ghee 2 table spoon ful Green chilli cut in small pieces Corrander leaves First take floor ,mix salt ,pinch of sodabicarb ,two tablespponf ul ghee ,carum seeds & kneed it thoroughly ,keep consistency slightly tighter than chaptti dough. Make small dhokli by taking small portions of dough in fist & giving shape by fingers roughly keep one side. Take 3 glass of water boil it ,wash the dal & put in boiled water with salt as per taste ,1/4 teaspoonful turmeric powder ,Put the dhoklis also in it & keep cooking on moderate flame till the dal is cooked, at the same time dhokli wud also be cooked. Take away from flames . Tadaka – Heat ghee in a small pan,Put cumin seed and coarse cloves powder , when turn brown ,add Ginger garlic paste ( optional ) Asafetida powder ,green chilies & one to one and half teaspoonful red chilli powder and dip the pan in dal dhokli pan And cover with a lid for few min. Spray half teaspoonful garam masala & corrander leaves & serve in a deep plate It is a one step complete meal.You can made it slightly more spicy by adding more chilly powder ,garam masa powder & Ghee. Can give tadaka with finely chopped onion and tomato also.

Hi aarr, Well how are you doing? By the way Rajma is Punjabi dish. And here we are discussing in and out about Rajasthani dishes. I heard very much about Daal baafle.Any one can share its receipe.I want to try it.It is also very famous recipe of Rajashthan(and also Indore-Malwa).I have little bit idea but I forget the quantities of ingredients. I would appreciate if someone of you share Daal baafle.
I am sharing my receipe of Papad ki sabji. Ingredients Urad papa 4 Curd 1 cup Cummin seeds 1/4 tsp Turmeric powder 1/4 tsp Corriander powder 1/4 tsp Green Chilles 3 Freshly chopped corriander Oil 2 tsp Salt to taste Method Take a bowl beat the curd,add salt,turmeric powder,corriander powder and mix well.Take a khadai put oil and then fry cumin seeds,green chillies.Then add the curd mixture.Put some water to it.Then add the papd pieces.Let it cook in the gravy.Garnish with corriander.Serve hot with bhakri,thepla or chapati.
Dear Jaishree9, I too will be grateful to get the recipe of Daal Bafle. Also a couple of questions: 1) I need to know where I can buy a tandoor (or whatever is used in a typical Rajasthani kitchen) to make baati. Also, how much a good one would cost. 2) Also the tandoor to make bafla. Can I use the same as batti? Is it a dome shaped one with a jaali on top? Thanks a million in advance. Husband is a die hard batti, bafla fan!!!
Dear vidhya Sorry for the late reply. Actually i didn't log this week so the delay. Yes the tandoor is dom shaped witth jali on top exactly. This can be bought at kitchenware store atleast in north India may be in south . bafla are first boiled in water . The dough is almost same as batti & then are baked or may be fried in ghee after cutting in four pieces .A cholestrol rich diet. You can stuff potato & green pea masala in it also for stuffed bfla.
