Sometimes I try to make stuffed parotta but the filling comes out during rolling. If I reduce the quantity of filling there is no taste of aloo in parotta. Any suggestions for improvement?
Veggies Bread Roll Ingredients 1 cup chopped mixed vegetables 4 slice of bread 1 tsp chilli powder 1/2 tsp turmeric powder salt to taste 1 tsp chopped ginger 1/2 tsp dried mango powder a pinch of asafoetida 1 tbsp oil 2 cheese slices 4 tbsp bengal gram flour dissolved in 1/4 cup water Method .Combine the vegetables, chilli powder, turmeric powder, salt, ginger-green chilli paste, dried mango powder and asafoetida in a bowl and mix well. Keep aside. .Soak each bread slice in water for about ten seconds and squeeze out the excess water by pressing between palms. .Cut the brown edges of bread and place a bread slice on a plain and dry surface. .Place some of the vegetable mixture on one side of the bread slice and roll out like a cylinder. .Heat the oil in a pan and dip the roll in besan batter and deep fry till they turn golden brown and crisp from all the sides. .Drain on an absorbent paper, place the cheese slice on top. .Serve hot with tomato ketchup or mint chutney.
I once saw this tip on Khana Khazana. Since then, I make all my stuffed parathas this way. Roll out two medium thickness puris. Keep potato filling in the centre of one puri. Apply very little water round the edges. Now place the other puri on the top of the filling. Dust with flour and roll as usual. This way the filling stays intact inside the paratha. You can half roast these and store them in the refrigerator also till later use.
QUICK CAKE CUSTARD ******************* Layer a square serving dish with sponge cake. Open a tin of fruit cocktail. Pour syrup on the sponge cake to soak. Next layer with the fruit peices. Lastly, pour some vanilla custard on the cake and fruit layer. Garnish with chocolate slivers/nuts/fruits or just crumbled biscuits. Leave to set for an hour or two in the fridge. This is my DH's favourite dessert.....While he is enjoying it, I can ask him for anything and he is sure to say YES!!! Hope you like it..... Friends please share more quickie dessert recipes.
Too much water or moisture in the filling should be the cause.Boiled potatoes should drained and allowed to cool before preparing the filling.Making the filling a l'lle bit more dry by sauteing the mixture over low flame also makes the filling dry.Let the filling cool thoroughly before starting to make parathas. Since parathas are soft after cooking the dough need not be too loose.
