    Recently, the talk of spice by @jayasala42 made me think of this old recipe, which I had been able to reproduce in a smaller batches.

    Keep a paper and Pencil ready while watching this video to write down the ingredients, and guesstimates of amounts. This is crucial if you hope to reproduce the dish in your kitchen with an instant pot or regular rice cooker.

    The frail woman who makes the dish, doesn't talk. The assistant (husband of Ms. Frail) says that they add Pyaar and Mohabbath into the dishes they make.

    There is a secret masala mix, that looks like coarse ground garam-masala.
    And there is the addition of milk-solids to the chicken biriyani.
    And the use of older oil used to fry the onions, milk, yoghurt and ghee.

    The amount of yoghurt used might surprise even the seasoned biriyani cooks. Very adaptable to vegetarian biriyani's with soaked garbanzo to replace the meat.

    Biryani was originally invented to feed the soldiers, when invading the new horizons.
    I don't have a {20 year old, 18th century mugal soldier, (male)}'s metabolism, so I shun biryani
    It is addictive tough...
