    Kentucky Fried Chicken

    Dear Friends,

Dedicated to all those who enjoy chicken..........

    Ingredients :
Chicken – 1 kg (Leg OR Breast pieces)
    Ginger paste- 1 tbsp
    Garlic Paste – 1 tbsp
    Soya sauce – 1 tbsp
    Chilli sauce – 1 tbsp
    Tomato sauce – 1 tbsp
    Pepper powder – 1 tsp
    Salt – 1 – 1 ½ tsp
    Water – 1 ½ cup

    For the Batter :
    Maida – 1 ½ cup
    Egg – 1 no.
    Haldi – ½ tsp
    Water – 2 cup
    Pepper powder – ½ tsp
    Salt

    For Coating:
    Bread crumbs

    For corn starch:
    Corn flour – 2 tbsp
    water - 1/4 cup

    Oil for deep frying

    METHOD :

Heat a kadai and add the chicken pieces, tomato sauce,
soya sauce, chilli sauce, garlic & ginger pastes,
pepper powder and salt. Mix well. Add water, cover and cook for
approx. 10 mins (till the chicken is 3/4 th cooked).

Put off the stove and remove chicken pieces and keep
    aside the stock.

In another bowl make a batter of maida, salt, pepper
powder, haldi, beaten egg and water . Mix with hand
for a loose batter. Take breadcrumbs in another plate.
Dip the chicken pieces in the batter and then roll it
on breadcrumbs till well coated. Deep fry the chicken
pieces till crisp and golden brown. THE KFC IS READY.

In another pan heat the stock again, when boiling reduce
flame and add the corn starch (add ¼ cup water to 2
tbsp of corn flour). Stir well. Use this stock as the
gravy and serve it in a bowl separately.

The stock is very tasty so instead of discarding the
same can be used as a gravy or soup and can be served
along with the fried chicken and may be toasted bread.

    Prawn Fry

    Hello Ladies,

here's an easy recipe for prawn fry.

    PRAWN FRY

    Ingredients :

    Prawns – ½ kg
Ginger –garlic paste – 1 tsp
Red chilli powder – 2 tsp
    Corn flour – 1 ½ tsp
    Maida – 1 tsp
    Salt
Curry leaves – a sprig chopped fine
    Oil for deep fry

    Method :

Clean and de-vein prawns. Add ginger-garlic paste,
chilli powder, corn flour, maida, salt and curry
leaves to the prawns and mix well. Keep aside for 2
    hrs. (marination ).

After 2 hrs just before frying, add grated coconut OR
Coconut powder – 1 ½ tsp to the marinated prawns and
    mix well.

Heat oil in a kadai and deep fry the prawns till done.

    Note :
    1. Adding coconut enhances the flavour.

    2. frying prawns for a longer time makes it rubbery;
remove the prawns as soon as it becomes lighter and
    little crispy.

    Hope u all like it.

    chukka curry ( chicken)

    chicken-1kg
    onions- 200 gms finely chopped
    tomato sauce-6tsp
    chilli sauce- 6tsp
    masala powder:
    cardomoms- 4 , cloves- 8 , dalchini(cinnamon stick) - 2 inch-----make to a fine powder
    gingergarlicpaste- 3tsp
    chilli powder- 5tsp
    turmeric powder- 1/2 tsp
    salt- accordingly
    oil-200ml

cut & clean the chicken to required pieces

Take a thick bottomed pan/ kadai add oil let it heat ,add onions and fry untill they are golden brown in color add gingergarlic paste ,let this fry for a while
    • Add turmeric and chilli powders in to the fried onions, add tomato & chilli sauces immediately add the chicken pieces, let this cook on low flame with frequent intervals of stirring.
    • When u feel the chicken is cooked along with the sauces add salt
    • keep stirring until the oil seperates from the gravy add the masala powder grounded , chukka curry is ready to serve.
Note: This curry needs continous stirring as it tends to stick to the bottom of the kadai as well as the chicken is to be tossedproperly with the gravy.

    Chukka curry

    Hi rsankar
In this recipe food color was to be added to get the color to the chicken as you have said, but i have avoided using the color. And this would be the same dry and reddish color chukka curry with less gravy. You will come to know this when u try it out by adding the food color or else u can add saffron mixed with milk to get the color.
    goodluck
    Anuja
