hi Ananthchemistry If you could be more specific with the dishes it will be easy to guide... generally... for any dry chicken dish... before marinating just put some holes with your fork here and there in the chicken peices and then set for marination... if its gravy marination alone is enough for the masala to get into the chicken... hope this helps...
