Need recipes for snacks which we don't deep fry or use butter

    Hi All,

    I need recipes for snacks which can be preserved week long, and which we don't deep fry or use butter. I pack two kinds of snacks everyday to my DD for school. One is mid-day snacks (which they have around 11am), and other evening snack (she has waiting time of 1hr before she can take school bus to be back home, so I give her some snacks to have at this time.)

    I find it difficult to prepare two different snacks along with breakfast and lunch in the morning, so, I prepare few of them on weekends and keep it ready for the week. But I feel I end up in deep frying all snacks that I give for evening time. Sometimes, I do give nuts, but not daily. She don't take daily. She doesn't take OATS.

    Can someone please share different ideas .

    Hello Kiran,

    Egg Bread toast - quick snacks / tiffin to be packed or served hot.

    Time: 5 mins
    Ingredients: Bread 4 slices, Milk 1 Cup, Egg 1, Sugar 2 Tablespoon, cardamom (optional), Ghee or oil (optional)
    Method:
    Beat the egg and add milk and sugar, beat it well till sugar dissolves
    Dip a slice of bread in the batter mixed by you ( avoid soaking) and immediately put it in hot tawa / frying pan.
    Sprinkle ghee around the bread and turn side and cook it. your egg bread toast is ready.
    you can use flavoured bread to make it more delicious

    Hey Kiran...

    You can try steamed dumplings....I think it is called 'Muthia' in Gujurati..

    My version is

    Wheat Flour - 1 cup
    Besan - 1/2
    Any grated vegetables.(cabbage / carrots / bottlegourd, etc) - 1 cup
    Ginger garlic paste and green chillies or you can put dry spices like red chilli powder, garam masala (acc to taste preference)
    Salt (just add before steaming as veg like cabbage/lauki leave water when added salt)
    Coriander leaves.. ( I also put little kasuri methi)

    Mix all the above to make a dough little soft than the chapati dough.. Roll like sausages or any shape you like. Steam in an idli steamer for 5 - 6 mins.. your dumplings are ready..
    This dumplings can be freezed for couple of days..
    You can eat as it is or you can put it in mustard seeds and jeera tempering along with curry leaves and red chillies

    You can also make gravy with onions, tomatoes and spices and add the dumplings to it..

    This is the way I make my DH and DS eat bottlegourd..

    One more....

    Powder oats in the mixie..
    Add salt, chilli powder, turmeric, coriander leaves, etc..
    Add water to make dosa like batter...

    Make dosas out of the batter...
    Here also spices you can add anything according to your taste preferences...

    Wont egg item go bad by evening without refrigeration? I avoid packing egg items in tiffin box for this reason.

    Thanks for the recipe. Good idea, but have a doubt will it taste good till evening if I pack for snacks?

    Acutally, I was looking for some snacks which I can store for a week long.

    One doubt, once I take out the dumplings from the freezer, will it stay fresh till evening?

    SANDWICH ROLLS.

    The most perfectly crispy sandwich rolls!! Kids will looove these treats.

    INGREDIENTS

    1 small onion, very finely chopped or processed
    1 carrot, processed or grated finely
    1 potatoes, processed or grated finely
    1 green chili, chopped very finely
    1 small capsicum, processed or grated finely
    ¼ tsp. garlic paste
    1 chicken breast, chopped into tiny little pieces (optional)
    1 tomato, chopped very finely
    salt/pepper
    pinch of turmeric
    pinch of tandoori masala
    ½ tsp. chili powder (optional)
    ½ tsp. cumin powder
    1-2 tbsp. oil
    chopped coriander
    ½ tbsp. soya sauce
    ½ tbsp. lemon juice

    INSTRUCTIONS
    Heat oil, add onion and fry until translucent. Then add the capsicum, fry for a few seconds then add the garlic. Stir well, and add the chicken. Cook until chicken changes color, next add all the rest of the veggies, green chili, salt and powdered spices.
    Keep stirring regularly on low heat, and you can add about a quarter cup of water to help cook everything properly and to prevent it from sticking to the bottom of the pan. Make sure you dry off the water completely though once everything is soft and mushy.
    Adjust salt and spices to your taste, sprinkle the chopped coriander and add the fresh lemon juice and soya sauce. Mix well and turn off the heat.
    Next, take 8-10 slices of bread (medium thickness). The bread needs to be VERY FRESH for this to work perfectly.
    Cut off the sides, top and bottom crusts of the bread slices. Then one at a time, using a rolling pin, roll each slice to flatten it, like rolling rotis. It will become a flat square-ish shape. Put the filling on one end, roll it up and seal with a bit of water.
    Bake it in an oven or roast it in tava.

    Hai You can make laadu (1) with few ghee...
    try making roasted ragi laadu, fried gram laadu etc by lightly roasting raagi and grind it in the mixie or machine.
    With less sugar or jaggery you can make these laadu. Only two or three spoons of ghee is needed.
    It is good for healthy and so filling too.

    Also try giving Pori urundai (2) which is also good for health and tastes yummy....
    Then chikki (3) made at home with extra nuts and dry fruits.....
    cooked sweet corns (4) etc...
