    Hi,

You can make inji murappa. In tamilnadu it is famous. I am not sure about ingredients, but it is made of ginger, jaggery and coconut. Prepare this semi solid and cut it into cubes and dry it inside house. We can have it after meal for digestion and also kids will love this. I remember when I was studying in school,I used to buy this and have it in class when teachers are taking class's.he he he....

The consistency of thokku should not be as thick as jam but little to some extent where u can mix with rice and eat easily.

I shred the ginger and only add salt and dry in hot sun. Store in the airtight bottle...
    Or
Shred the ginger and store in the zip freezer bag and put the freezer.
We can use it for months. Before using remove a shred ginger piece and keep near the stove to come to normal temperature.

Ginger is one of the foods that can give you a health punch because it is so full of healthy benefits for your body (and mind).
I often use ginger in this tea whenever I have a cold.

Ginger is a must buy in my veggie shopping list. I too shred them and store them in freezer, this way it lasts longer.

I also love generous amount of ginger in my tea!
