Need recipe using ginger as main ingredient

    Hi,
    I have a lot of home grown ginger.. it has grown without any of my effort. I dont want to waste them.
    Please suggest me ways to use them. I can use them in chutney and others.. but with this only a little will be used.

    shred then into juliennes soak in lime juice and salt. when it is well soaked you can dry them well in the sun and use it after heavy meals. aids in relieving gas and acidity and heaviness. youcan make ginger pickle. you can try ginger murabba a sweet preserve chitvish mam has given the recipe

    hi tenkaniyidoor,
    you can preserve ginger in homey, make north indian style grated ginger. Once i saw one marwadi family they used to soak ginger slices in salt and lemon juice whole night then they will sun dry it. When it is dried completely then they preserve it and use it like digestive slices of ginger. I hope you can get many more recipes.

    You can make candied ginger which you can use later in baking or other cooking or just eat it....excellent combative to motion sickness. You can also us a couple pieces of the candied ginger and use it when you poach peaches to make ginger peaches which I love to eat in the winter.

    Simple Thokku with Ginger. Soak 100 gms of tamarind with little of water then grind it with 100 gms of ginger and salt. Heat the oil with mustard and pour the mix into it. Add turmeric, asafoetida and chillipowder into it and leave it in the stove till becomes thokku and add little of jaggery.

    @Shanvy, I live in Bangalore, it is not sunny here. I suppose drying of the ginger would require lot of sun light. would be able to preseve them if i dont then properly too? kindly advice.
    @priyakanth, surely would try thokku. Please let me know if the consistency of thokku as that of a Jam.

    this is what i do sometimes. keep it on mw high for 4 /6 minutes depending on the quantity.. let it rest..most of the moisture is gone..and then dry it for a few more days.. try in a small quantity.. this is how i dry coriander/curry leaves, chillies..

    1) dried ginger
    2) Thokku
    3) Puli Inji...
