Friends, DH is 40 and he is diabetic.(diagonised 5 years ago) He packs lunch to his office.By morning he leaves around 8 AM and comes home by 7. I need ideas for atleast two kind of snacks per day. One: To have by 11 AM other: To have by 5 PM We use Tupperware for packing.The evening snacks should not get spoiled. Apart from sundal,fruits and cut vegetables ,please suggest some diabetic friendly snacks.

try giving him a mix of nuts - walnut, peanut, almond. about 3 nuts each. This is healthy and satisfying too. This can be the midmorning snack - 11 AM. For the evening, you can send a brown bread sandwich. 2 bread slices (toasted) and with stir fried vegetables placed inbetween them.
hi oats with a little salt and a dash of coconut milk-you can use tupperware bottles. methi leaves pakoda methileaves chappathi roll filled with tomato onion capsicum sauteed brown bread toast with a mintchutney filling i've seen my cousin packing this for her dh. regards v
how about giving fruits/sprouts in the morning session and boiled chana or sandwich if he works in a controlled environment..as the filling could spoil. salads make a great filler. peanuts, nuts can be given. but again being calorie conscious helps.. If power cut is not a issues- stuffed parathas make a great evening snack. mini steamed momos with lots of vegetables filling.. carrot sticks, cucumber sticks, along with a small container holding pepper/jeera/salt roasted. corn with lots of herbs. if you can get hold of blue berries than they make a wonderful snack. dried also are good. fruits and yoghurt make a great combo. you can try baked ragi thattai Baked Ragi and oats thattai – A guilt free snacking or a illusion?? - Blogs - IndusLadies, oats thattai in the same way, oats biscuits, crackers.. not store bought crackers-sugar free they contain excess sodium..
I used to get Sweetcorn packet from the stores(Nilgris,heritage etc...).Store it on freezer with the packet. You can take sweetcorn as required.You can cook it in steam with salt for few mins (try to steam it with little water).Take a thava and pour very little oil ,kadukku,curry leaves and the boiled sweet corn..tht's it it's done.Pack it in tupperware box.
Coconut milk should not be used often for diabetics.But,oats with milk is a very good idea. Chappathi roll with fillings,brown bread toast.Very nice and tempting. Then I should wake up half an hour early than the regular timing. Thanks a lot Vidya. Keep posting.
Apart from fruits and sundals,the chances of the fillings getting spoiled are high. Regarding salads, Can you suggest some salads that won't get spoiled easily and are ideal for packing? I have never tried salads so far. As far as I know ,salads means mixing of raw, cut vegetables of our choice. Adding cucumber makes the mixture watery. Help!
