Recipe for mixed vegetables kurma Mixed vegetable kurma Ingredients 2 cups mixed vegetables, chopped (I used cauliflower, carrots, beans, green peas and potatoes) Half cup cashewnuts and one fourth cup khaskhas/poppy seeds Ginger garlic paste 1 tbsp Turmeric powder half tsp Red chilli powder 1 tsp 2 big tomatoes blended into puree 1 onion sliced and deep fried until golden brown Half cup beaten curd(optional.i did not add this time) Two table spoon chopped mint leaves Two tbsp coriander leaves For tempering Cumin seeds 1 tsp Cloves 3 Cinnamon stick 1 Cardamom seeds green variety 4 Mace 1 string Oil for tempering 2 tbsp Method Make puree of tomatoes Add the cashew nuts and poppy seeds to a cup of boiling water. Let it boil for atleast ten minutes. Grind this boiled mixture with fried onions and make a smooth paste. Cook the chopped vegetables in water to which a pinch of turmeric and salt are added . cook until about 80 percent done. Heat oil in a vessel and add cumin seeds. When the cumin seeds splutter add the whole garam masala spices mentioned under tempering. Then after half a minute add ginger garlic paste. After about a minute add turmeric powder and tomato puree. Add the paste of cashewnuts poppy seeds and fried onion. Add some water according to the consistency required of the gravy. At this stage add curd if you wish to. Add salt. Add the cooked vegetables. Cover and cook for three to four minutes on a low flame. Switch off flame and garnish with coriander leaves. Serve hot with rotis or rice.
