Curd is a very versatile item and can be enjoyed in many ways and in many recipes as well. My favourite is the Curd Curry. When in dilemna I always end up making this as my DH also loves it. Here is the recipe.... CURD CURRY Make about two glasses of medium thick buttermilk. Add a tablespoon of besan and blend well till no lumps. Heat a little oil. Add hing, mustard seeds, jeera, chopped ginger, chopped green chillies, curry leaves. When they splutter, add the buttermilk mix. Add half teaspoon turmeric powder and salt to taste. Boil on low flame til nice and thick. Do not use high flame else the buttermilk wil curdle. Add chopped coriander and serve with steamed rice. If you want the curry sweeter just like the Gujarati style, add some jaggery or sugar. If you want to serve Punkabi style, do not add sugar. Fry small pakodas of besan and add to the curry just before serving
