    Kaaju Paneer Masala

    1. Fry 150 gms Paneer till golden.
    2. Remove, add in the same oil fry 1/2 cup kajus and keep aside.
    3. Deep fry 3 sliced onions till brown.
    4. Cool and grind into a paste.
    5. Boil 3 chopped tomatoes, 3 falkes chopped garlic, 1" piece chopped ginger with 1 cup water, till tomatoes are soft.
    6. Cool and then puree.
    7. Soak 3 tsp watermelon seeds and 1 tsp khus khus for 1 min. Grind to paste.
    8. Heat 2 tbsp oil and fry onion paste till brown.
    9. Add 1/2 tsp chilli powder and khus-khus paste and mix.
    10. Add tomato puree and cook till oil separates.
    11. Add 1/2 cup milk gradually, stirring constantly, and cook for 3-4 mins.
    12. Add 1/2 tsp garam masala and salt.
    13. Add enough hot water to get a thick gravy.
    14. Boil and then simmer for 10-12 mins.
    15. Add paneer and kaju.
    16. Boil once more, simmer for 5-mins till paneer is heated through the serve.

    ChatPat Tofu Fry:
    • Take 2 Tablespoon of besan, 1 tablespoon Rice flour, required quantity of Chilli powder, asafetida (hing) and enough salt. Mix like a bhajiye batter.

    • Cut Tofu to 2 inches lengthy pieces

    • Keep tofu fry and dip it in the batter.

    • Fry till golden brown and serve with mint chutney or Tomato ketchup.:thumbsup

    1. Buttermilk Rasam

    This rasam if not only very good in taste but takes only few minutes to prepare.
    Ingredients;
    Butter milk 250ml
    Rice flour 2tsp
    Salt to taste
    Hing powder 1/4 tsp
    Butter milk chilli** two numbers
    Omum 1/4 tsp
    Mustard 1/4 tsp
    Fenugreek seeds 1/4 tsp
    Green chilli One
    Red chilli dried One
    Ginger one small piece
    Curry leaf
    Cooking oil 2tsp

    ** This is available in stores as pickled in buttermilk dry green chilli

    Method:
    In a kadai heat two tsp of cooking oil and add mustard and fenugreek and
    on crackling, add the dry green chili cut into pieces of half in inch size, followed by green chilli cut into pieces , dry red chili pieces, omum and curry leaf.
    Prepare buttermilk with salt and rice flour and mix throughly. Add this to
    the above oil fried mixture and stir continuously. When it starts to boil switch off flame.
    Do not boil as butter milk will tend to break.

    Now it is ready to serve.
    This goes well with cooked rice.]

    100 gram sev (vermicelli)
    100 gram moong dal
    2-tbsp chopped green chillies,
    ½ turmeric powder
    1-tbsp mustard seeds,
    Salt to taste,
    5-6 curry leaves,
    1\2 lemon,
    2-tbsp oil,

    Coriander leaves for decoration

    pl boil to moong dal little water, wash to sev add to moong dal
    Heat the oil in thick pan and add muster sedds and curry leaves. Turmeric powder ,salt add to moon dal with sev mix well slow gas (halke hath se hilane ka). Garnish with coriander leaves.
    Serve hot in serving plat and also add lemon if needed.
