Here comes a plate of poha mixed with veggies.... A healthy and tasty dish.... Ingredients 2 cups thick poha 1 cup mixed veggies cubed( potato, carrot, green peas, corn and french beans) 2 onion fine chopped 1 tomato fine chopped 2-3 green chilly finely chopped Few coriander and curry leaves 1/2 tsp turmeric powder 1/4 tsp sugar Salt as per taste 2-3tsp cooking oil 1/2 tsp mustard seeds 1/2 tsp each chana dhal and urad dhal 1 tsp peanuts. Method Rinse poha in water in a colander 2-3 times, make sure the poha is soft and not mushy, gently rinse the poha.... Add turmeric, salt and sugar to the poha and mix gently. In a pan heat oil splutter mustard seeds, now add chana dhal, urad dhal, green chilly, coriander and curry leaves and saute until the dhals change the color. Now add onions, tomato and the veggies and saute well. Now add the poha and mix well. Check the taste and add salt if required. Close and cook for 4-5 mins. Serve with a lemon.... Suggestions Fresh grated coconut can also be added for the garnish. Alongwith peanuts, cashew can also be added.
