Here comes my mini tamil thali....It was filling and sumptuous... In the middle i have served rice, or saadham and topped it with a spoon of ghee. Arachuvitta murangaka sambhar Ingredients 2 drumstick tender, washed and chopped to medium chunks. 1/2 cup tamarind juice 1 onion 1 tomato 1/2 cup cooked toor dhal Salt as per taste Turmeric 1/2 tsp 1/2 tsp jaggery Things to roast and grind to fine paste 2 tsp coriander seeds 1/2 tsp chana dhal 1/2 tsp urad dhal 1/2 tsp methi seeds 1/2 tsp cumin seeds 5-6 Black peppercorns 6-7 dry red chilly 4-5 tsp dry grated coconut To temper 1 tsp ghee 1/2 tsp curry leaf 1/2 tsp hing Method : Dry roast the things mentioned under roast, cool and grind to fine paste adding little water. Heat ghee in a pressure cooker add things mentioned under to temper, once the mustard seeds splutter add the onion, tomato and drumstick and saute until the veggies are soft. Now add the tamarind extract, and allow to boil for 5 mins. Now add the ground paste, salt, cooked toor dhal a glass of water, mix everything and bring to boil for 5-8 mins. Urulai koda milagai karamadhu (Alu capsicum sabzi) Ingredients 2 potato 2 capsicum 2 onion 1 tsp oil 1 tsp mustard 1 tsp cumin seeds 1 tsp red chilly powder 1/2 tsp kasuri methi Few curry leaf Salt as per taste. Method Wash and clean the veggies, into thick stripes. Heat oil in a pan and splutter mustard seeds, cumin seeds and curry leaf. Now add onion and fry for 2-3 mins, next add alu, capsicum, chilly powder, kasuri methi, salt, mix well, close and cook for 5-8 mins. Serve as a side dish with rice. Nellika rasam (Indian gooseberry rasam) Ingredients 2 medium sized nellika 1 tomato 2 tsp rasam powder 1 tsp cooked toor dhal Few curry leaves Salt as per taste Ghee, mustard, and hing Method Wash chop and grind nellika adding little water to fine paste. In a bowl add nellika paste, tomato pieces, rasam powder, turmeric, salt and curry leaf.... When it turns frothy, switch off the flame and season with mustard, and hing. Muttai kose kootu Ingredients 1/2 cup yellow moong dhal 1/2 cup washed and chopped cabbage 1/2 tsp turmeric 1 tomato Salt as per taste To grind 3-4 tsp fresh coconut 1 tsp cumin seeds 2 green chilly To season 1 tsp ghee 1/2 tsp mustard few curry leaf 2-3 dry red chilly. Method Heat ghee in a pressure cooker add the things mentioned under to season.. Now add cabbage, moong dhal, tomato, salt, ground paste, turmeric and 3 glasses of water. Pressure cook for 4 whistles. Onion tomato pacchadi Ingredients 1 each tomato and onion 1 cup beaten curd Salt and chaat masala as per taste. Method Mix the above things and serve chill. Apple and banana salad Ingredients 1 each apple and banana 1 tsp honey Method Mix everything and serve immediately Any choice of nuts can be added. Semia payasam Ingredients Vermicelli 1 cup Milk 2 cups Ghee 3-4 tsp Cashew & Raisins 1/2 cup (Mixed) Sugar 1 cup Cardamom powder a pinch Method Add vermicelli in 1 tsp ghee until it turns golden brown and keep aside. Bring milk to boil, when bubbles form, simmer add fried vermicelli and cook for 10-12mins. Add sugar and mix until sugar dissolves. Fry cashew and raisins in remaining ghee and add to the payasam with cardamom powder. Serve yummy vermicelli payasam immediately or chill. Suggestions 1tsp rose water can also be added for a different and a delicious taste. Masala neer mor Ingredients 1 cup curd 2 cups water Salt as per taste 1/2 tsp ghee 1/2 tsp each mustard, cumin seeds and hing Few curry leaf and coriander leaf Method Add water and salt to the curd and beat it well and add coriander leaf. Season with rest of the ingredients and mix well. Hope, you enjoy the tamil thali as much as my family did.... Happy cooking
