every body's mom will have their own recipes-traditional ones modified or invented ones here is my mom's recipe i'm dedicating this to my mom tomato aviyal there are certain days when you dont have time to go and buy veggies,and only available things will be tomatoes and onions tomatoes-2 onions-4 green chillies coconut -1 cup jeera-1teaspoon garlic-1 pod cut tomatoes and onions into long pieces cook in 2 cups of water and salt. grind green chilies ,turmeric ,jeera,garlic ,coconut into a fine paste add to the previously cooked tomatoes. mix well,stir for 2 minutes. add one spoon coconut oil and crushed curry leaves good with chapatis,rice hope to see ur mama's recipes too! regards
here comes another one chutney coconut grated-1 cup redchillies-2 small onions-4 tamarind-1 small piece salt heat a kadai pour 1 tablespoon oil add red chillies,onions,tamarind,and saute well. add coconut and fry till brown. keep aside,after cooling, grind it. dont add water.
this is my fav also carrot curry carrots grated-2 cups green chllies-2 coconut-1/2 cup cashews-8-10 jeera-1 spoon turmeric onion-1 big heat a kadai saute onion in one spoon oil add grated carrots green chillies saute well for 2 minutes add water cook for 5 minutes meanwhile grind coconut jeera turmeric and cashews to fine paste. add to cooked carrots. cook for another 3 minutes season with plenty of curry leaves yummy carrot curry is ready goes well with chappathis my recipes r less spicy,add more chillies according to ur taste carrots and cashews form a nice combintaion,very yummy!
most of recipes contain coconut because i am from kera-la! and here i get freshly ground coconut 24/7 from groceries
i make my own chutney with mtr chutney powder. mix 3 tablespoons of mtr chutney powder with 1/2 cup water.stir well so as to make a smooth batter. season curry leaves,chopped small onions(2),saute it and add the chutney mix,stir for one minute. ur brand new chutney ready to serve.
this is mom's recipe modified by me daal capsicum toor daal -1 cup green capsicum-1 big onions-2 tomato-2 green chillies-3 turmeric chana masala-2 spoon ful kasuri methi-2 spoon jeera-1 spoon tomato puree-2 spoon saute chopped capsicum,onions,tomato green chillies,in 2 spoon oil. add dal ,salt, turmeric and cook well. heat one spoon oil in a small pan,add kasuri methi and jeera , and chana masala,fry for 1 minute add to the dal mix and add tomato puree. .stir well ,cook for 3 minutes. daal capsicum vidya istyle ready to serve......................
