Maize Flour Vs Corn Flour

Aren’t they the same?

 

You mean the white color cornstarch, the one we use to thicken gravies, right? I know in India we call it corn flour.

Cornstarch ( corn flour in India) is made just from the starchy part of corn, where as maize flour ( makki ka atta) is made by grinding whole corn kernels. So yes maize flour is definitely healthier. You can add it in dosa batter, pancake batter, chapathi dough etc. Some links below

This reminds me as a school boy i learnt to make sambhar and rasam. For sambar mom used to mis rice flour with cooked dhall and transfer it to sambar. Fir rasam no thickening is needed.
