Kitchen Sink - New

As we are renovating, we have to replace our kitchen sink as well.
I want porcelain kitchen sink but i do not see many options anymore.
So me and H are on different page now, He wants stainless steel - double (one big, one side small) or single.
I want porcelain + double. then other factors are - undermount, H insists it undermount as it saves space.

Other options are quartz ( that is bit less heat resistant and gets discolored over time).
All the options are looked in porcelain - are either over mount or single big farmer sink that is coming bit outside like an 1inch.
Nothing at home depot or lowes
Suggestions plz
