Dear friends; I am in search of a good kerala style fish curry recipe ; with kodampuli or normal tamrind is ok.. Whenevr I cook I do not get the dark brown colour; my curry will be bright orange ) Do share a few recipe pls.. Nitha
Nitha, Are you shocked to see me answer???:hide: Last evening L N showed Tvm meen curry. She said the recipe varies from Tvm to kottayam to Trichur to Malappuram!! She said that it is traditionally made in maN chatti & any variety of fish can be used. She put brinjal, drumstick, curry leaves with meen. She ground to a paste Raw coc+red chilli pr + dhaniya pdr+4,5 shalllots+haldi+uluva podi+regular tamarind Sauted the vegs & added this paste with enough water + salt. Covered & cooked till done. She was served the same with vevicha kappa, poured over it & said it was too good!! Love, C

Hi Nitha, Do you use any fish curry masala? Eastern is worth trying.. Masala Eastern Fish Masala - 2 table spoon Chilli Powder - 1tsp Turmeric - 1/4 tsp Corainder Powder - 1/2 tsp Mix all these together, add 2 tbs water, and make a paste of it.. And when you make the curry, once you saute chillies, garlic, ginger and shallots, add the masala to the oil and fry till it turns deep red/brown. Continue by adding kudampuli soaked in water and cook. See if it turns the way you like it.. Adding coconut milk at the end might diminish the color. So if you want bright color, avoid coconut milk. Usually frying the masala in oil should do the trick.. If you dont have fish masala, increase the proportion of chilli powder and coriander powder!! Let us know if this works!!
