Wheat Rava Idly Ingredients: Fine wheat rava 2 cup Curd 1 cup Green chilly 2 Ghee 2 sp Coriander leaves Curry leaves Mustard seeds 1/2 sp Salt Method: Dry fry wheat rava and keep aside. In the same pan pour ghee and put mustard seeds and chopped green chilies. Add curry and coriander leaves. Add fried wheat rava and fry well. Add salt and remove from the fire. Now put this in curd and mix well. Keep for 1/2 hour and make idlies as usual. Note: If you want you can add grated carrot, cucumber or any greens in the dough to make varities.
Mixed dal Idly Ingredients: Yellow Moongdal 1cup Chanadal 1cup Toordal 1 cup Onion, Peas, Beans - one cup Green chilli 2 Coriander leaves or Mint leaves Salt for seasoning: Mustard seeds Cumin seeds Method: Soak all the three dals together overnight. Grind them in the morning and add salt. Make seasoning and pour it on the dough. Mix cooked veg. also. Now the dough is ready make idly out of that. They are very healthy. Serve them with tomato chutney.
MTR Style Rava Idly! Ingredients: Thick curd - 250 ml (mix with water ) Bombay Rava-1 cup Panshirava - also known as sirutti rava 1 cup A cup of chopped fresh coriander (optional) One teaspoon of powdered sugar (optional) Salt - required quantity A handful of whole cashews - split into two Oil quarter cup ENO FRUIT SALT PLAIN 1 1/2 Table Spoon For Seasoning: 1 teaspoon of mustard 1 teaspoon of Udad dal 1/4 teaspoon of asafetida powder One tablespoon of crushed green chilli A tablespoon of crushed ginger Method: In a big vessel put both the ravas and mix well. In a pan put cashews and fry well. Remove and keep aside. Then put all the ingredients given for seasoning and make the seasoning. Then pour it on the rava mixture and mix it well. Now put chopped coriander and salt in it. Mix well. Now add curd and mix well. The dough must be thicker than normal idly dough. Now add Eno fruit salt in the dough and mix well. You can see the dough is increasing because of Eno. Then make idles as usual by putting them in the idly plates; KEEP ONE ONE CASHEW FIRST AND THEN POUR THE DOUGH. After 10 - 12 min. open the pan and remove the idly plates. You can see the size of the idlies. They will be very bigger than normal; like MTR ! Enjoy the MTR STYLE RAVA IDLY WITH ANY CHUTNEY ! NOTE: You can grain fresh coriander leaves, green chillies and ginger and then add the mixture in the dough. By doing this you will get green idlies. Instead of cashew nuts you can put one piece of carrot.
