    I am a product of Meenakshi Ammal...basic recipes might work but I had a very tough time deciphering the aazhakkus, padis and palam etc..There were many funny incidents relating to these 2 books during my initial novice days .

    The concept of cooking has been drastically changing over time, esp. now with everyone watching their health. Actually we cook to make the food digestible, with necessary additives,and then comes the taste...which differs from person to person . Hence the goal is to first learn min. cooking to preserve nutrients. in most of the shows the taste & presentation are given more importance rather than nutrition, so we need to be careful in choosing these shows.

    Yes, preserve nutrients.

    I heard that cooking vegetables increases the nutrients in the food instead of eating raw. But don't over cook!
