I plan to cook Sunday and freeze it every week and am south indan.
You can freeze dal and sambar for weeks, but some of the sambar vegetables might be a bit different texture-wise. If you are keeping in fridge immediately after cooking then I usually keep for 2 days, no more than 3 for all the items you have listed. I don’t know about dosa batter freezing. I buy it ready made and use within 1 week.
How about cut veggies? I usually cut veggies fresh everyday..how to keep fresh forit stay in normal refrigerator ? mine gets soggy in few days

Foods refrigerated stays ok for about 2days especially the South Indian veg foods. Of course the items taste would diminish and certain vegetables in sambar would be distasteful. Frozen dough of idli -dosa after thawing out for long did not cook well. Moreover there is disappearance of Salt from the food refrigerated. Once thawed it’s not to be kept back in fridge for afterwards eating. This is experience in 220 volts supply whereas in USA it is 110. Nutrionally speaking, the eating would be monotonous and family members all or few would get fed up easily with same food again and again throughout the day or days. However my South Indian vegetarians - kith and kin in USA DO NOT cook daily. I heard them cook only in the week end for the entire working week. In India decade ago frozen ready foods introduced in retail but not picked up well. Bought and Tried frozen chappathi and parrota once and bade good bye to it.
