hi ladies, what are some of your crowd pleaser recipes when company is at your home to visit? veg/non-veg, anything from drinks and appetizers to main courses, snacks and desserts. is there anything special that you do to ensure the food turns out well and you have a nice time socializing with guests rather than going crazy in the kitchen? if all the great chats happen in the kitchen (and we are avoiding certain people), maybe solitary confinement in the kitchen isn't so bad after all :cheers thanks ladies...

I make sure I am in good mood when cooking . I also cok everything before the party including paranthas so at that time its just heat & eat. I have food warmer so everything goes in there ready to serve. Here are few things I make which people rave about. BBQ fish Quinoa mango salad Tofu tikki ( just like paneer tikki) Tiramisu ( get asked to make this almost at all dinners) Pineapple cake Palak methi paranthas I would be happy to post any recipe if anyone would like. I love having people over and look forward to any get together.
1 cup cooked quinoa. Combine insmall bowl: 1/3 cup safflower oil or olive oil 1/4 cup apple juice 2 tbsp rice vinegar 2 tbsp honey 3/4 tsp sea salt 1/2 tsp pepper 1/4tsp chilli flakes Prepare 2 celery stalks thinly sliced 2 scallions thinly sliced 1 tart apple cut into 1”cubes 1/2 small red onion diced 1/2 cup dried cranberries or raisins 1/2 cup chopped pecans or walnuts 1/2 cup chopped fresh Dhaniya 1 mango chopped Put all things except dressing in a bowl. Toss withhalf the dressing and set aside to cool to room temp When ready to serve add remaining dressing, & toss gently. Serve cold. I have posted a picture in Picture thread.
Palak Methi parantha Take 1 bunch of fresh spinach, clean & wash. Put it in your blender along with 2-3 cloves of garlic, 1 green chilli, 3 tb sp of yogurt and 3-4 tb sp of dry Kastori methi. Blend all this to a puree. If its dry add little milk ( no water). It will be thick paste. Now take it out in a bowl and add enough atta to make dough for roti, if you need some liquid ad milk only. Once its all combined put 2 tb sp oil and kneed it & keep aside for 1/2 hour. Now make paranthas and keep in a hot case. You can microwave these just before serving and they are soft and delicious.
we socialise a lot so invite many & get invited ourself........... these are my tricks 1.finalise menu with hubby & finish shopping atleast 3 days in advance.I have a master list of necessities for party & I refer to it alot. 2.a day before party make tomato-onion masala,atta dough ,soak up things for snacks & chk the crockery & cutlery. 3.by afternoon make everything,measue rice & keep aside,make chutneys & raita(avoid salt) & salads....... my fav veg serves are snacks:veg seek kababs,fennel paneer,vada,fried idlis,cheese toast,aloo bonda,nachos with dips,bhel,stuffed golgappas ..........normally i light fry this stuff & re fry when guest come. main course;butter paneer,dal makhani,corn spinach,tawa fried veg(much demanded),punjabi kari,rajma,chola,stuffed brinjal & tomatos,spicy bhindi......... papad,salad,raita,roti & rice.......... dessert :ice-cream with fruits,Gajjar halwa,phirni(rice kheer)custard,brownies,............. if I have one family I will make just one desert but if there are more people I try to make 2 desserts........ In past I had excellent house maid who would make chappatis or puris but now I have to do almost every thing myself but atleast the maid is there for setting table,cleaning & chopping......my hubby takes care of drink cabinet & other things like adequated tissue papers are laid,ashtrays are on side tables,wash room has all essentials,kids have some entertainment to offer their friends & so on.........
Mahajanpragati can you please share your recipe for Tawa veges and Fennel Paneer , they sound interesting.
just the easy and most common one so that we don't spoil our name in front of the guest by trying something new
I make sure that I finish everything before the guests arrive one week before fix the menu, do the shopping day before, finish cutting all veggies, and making the curries on the day just before the guests arrive I do the starters and prepare rice and set the table for starters --- chicken cutlet, fish cutlet, fish fingers salad non veg -- chicken gravy, and lamb with a vegetable combination veg-- sambhar, dal and leafy vegetable, beans curry, aloo methi, rice --- if am doing biryani I will make bhagara baigan and skip the non veg curries chicken pulao, coconut rice, bhagara rice, fried rice dessert --- tiramisu, mango pudding, kheer, stick date pudding,rasmalai All my desserts people will generously go for a second serving
