    My niece has learnt the recipe of Apple Cake from her school. She eagerly made it for all of us last evening. It turned out nicely. She asks me to share the recipe with u J

    Ingredients:

    1 cup oil
    2 cup sugar
    3 cup flour
    1 tsp salt
    1 tsp nutmeg
    1 tsp cinnamon powder
    1 tsp baking powder
    3 eggs
    1 tsp vanilla extract
    1 cup chopped nuts
    1 tsp cloves
    1 cup baking soda
    4 cups chopped apples

    Glaze


    2 tblsp milk
    1/2 tsp vanilla essence
    1/2 stick butter
    1/2 cup brown sugar


    How to make apple cake:

    · In a bowl mix the oil, eggs and vanilla extract together.
    · In a separate bowl sift the dry ingredients together and add this mixture to the oil and egg mixture and mix well.
    · Add in the apples and the nuts.
    · Pour this mixture in a baking pan and bake for 1.15 minutes at 350 degrees F.
    · For the glaze mix all the glaze ingredients together and boil the mixture for one minute.
    · When the cake is baked remove it from the oven and white it is worm pour the glaze on it.
    · Apple cake is ready.

    Thank you so much for the recipe of Shahi Mushroom. I tried it last night and my family was very happy. I give all my love to your dear niece for kindly sharing the recipe of Apple Cake with all of us.

    Let me share with you the recipe of Khoya Matar that I learned from my mother.

    Ingredients:

    1 cup green peas
    500 gms milk solids (khoya)500 gm
    3 tblsp cashewnuts (broken)
    1/2 cup bread croutons
    1/2 tsp red chillies crushed
    1 tsp red chilli powder
    2 tblsp raisins
    1/2 tsp turmeric powder
    1/2 tblsp oil
    2 green chillies chopped
    1/2 tblsp ginger garlic paste
    1 tsp sesame seeds roasted
    saltto taste
    1 tsp coriander powder
    1/2 cup onion paste
    1 tblsp coriander leaves chopped
    1/2 cup tomato puree


    How to make khoya matar :

    · Roast the khoya slightly.
    · Keep aside.
    · Boil green peas.
    · Heat up oil in a pan, mix in onion paste and stir fry till pink.
    · Mix in ginger-garlic paste and sauté.
    · Mix in tomato puree, turmeric powder, red chilli powder and roast till the oil leaves the masala.
    · Mix in boiled peas and stir.
    · Mix in salt, roasted khoya and stir.
    · Mix in broken cashewnuts and raisins.
    · Mix in coriander powder and stir to mix well.
    · Take off the heat.
    · Sprinkle cut green chillies, roasted sesame seeds, crushed red chillies on the bread croutons and mix well.
    · To serve assemble the khoya-peas masala in a dish and cover with bread crouton mixture.
    · Sprinkle with cut coriander.

    Jaya, I must thank you for the recipe of Dahi ke Kebab! I found it very interesting and tried it last night. Guests who had come down for dinner were all praise for it J


    Let me share with you the recipe of Prawns and Cabbage that one of my guests shared with me last night.


    Ingredients:


    Finely shredded cabbage,
    kalonji,
    green chillies,
    half a pinch of turmeric,
    onions slices thinly,
    salt,
    prawns


    Preparation:


    · Heat oil and add the kalonjis when they splutter slit thechillies and put them consequently the onions need not wait till the onions turn brown.
    · Add the shrimps along with the minute pinch of turmeric.
    · Add the cabbage now and keep stirring on high flame till the preparation looks glistening.
    · Your dish is ready. Have it with steaming hot rice.

    Thanks to both of you for trying my recipes and giving feedbacks.

    After years of trial and error, I have mastered the art of making Chocolate Bread Pudding.
    Here is the recipe!


    Ingredients:


    300 ml Milk
    4-5 tblsp Sugar
    4 Slices Brown Bread
    3 Eggs
    2 tblsp Drinking Chocolate or cocoa powder
    1/2 tsp Vanilla Essence
    250 ml Thick Sweetened Cream


    How to make chocolate pudding with cream:

    · Cut the bread into pieces. Beat the eggs and add the essence.
    · Warm the milk and mix in the sugar. Gently mix in the cooca powder.
    · Put off the flame and add the beaten eggs and the breadcrumbs. Mix well.
    · Grease pudding mould and pour the mixture into the mould.
    · Cover lossely with foil and steam in a rice cooker or pressure cooker without whistle for 30 - 40 minutes or until the pudding is spongy.
    · Allow the pudding to shrink before unmoulding.
    · Then put it in the fridge for 1 hour before serving with fresh, thick and sweetened cream.

    I had a delicious Mushroom Pulao last night at my colleague’s place. She shared the recipe with me.

    Ingredients:

    2 cup rice (chawal)
    3 onion (pyaj)
    200 gm mushroom
    200 gm cottage cheese (paneer)
    2 capsicum (shimla mirch)
    5-6 cauliflower (phool gobi) pieces
    4 cloves (laung)
    2 cinnamon pieces (dalchini)
    2 bay leaf (tej patta)
    6 tbsp clarified butter (ghee)
    2 tsp salt (namak)


    How to make mushroom pulao :
    · Soak rice for half an hour or so.
    · Boil rice in a container until it gets cooked properly and water dries up.
    · Finely chop onion.
    · Cut paneer cubes.
    · Cut cabbage into fine long pieces.
    · Cut mushroom into slices.
    · Heat ghee in a pan and fry paneer until light brown.
    · Take them out and keep aside.
    · Now fry onion in the pan until it turns pink.
    · Then add laung, dalchini, tej patta and mushroom. Fry for few minutes.
    · Then add shimla mirch, phool gobi, namak and paneer cubes along with little water. Cook at low flame.
    · When vegetables are cooked properly, remove it from the flame.
    · Serve them hot.

    I made the chocolate bread pudding on Sunday evening. We had a birthday party at home and the little guests loved the pudding!


    Let me share with you the recipe of Khajoor (Date) Chutney that my mom made for that day.


    Ingredients:


    1/2 kilo Dates (Khajoor)
    2 teaspoon fresh Ginger (Adrak), cut into thin long strips
    4 teaspoons Salt (Namak) (level)
    1 cup Sugar (Cheeni)
    6 teaspoons Raisins (Kishmish)
    1 1/2 cups or 2 cups Vinegar (Sirka)
    1/4 cup blanched Almonds (Badam)
    2 Cloves (Lavang)
    2 big Cardamoms (Elaichi Moti)
    1/4 teaspoon ground Cinnamon (Dalchini)
    1/4 teaspoon Red chili pepper (Lal Mirchi)


    How to make date chutney:


    · Stone the dates and cut them in halves.
    · Put dates, ginger, ground spices, salt, chilli powder and vinegar in a pan and cook till dates are tender.
    · Now add sugar and cook until the mixture thickens.
    · Remove from the fire, add raisins, almonds slit into halves and stir well.
    · While the chutney is hot pour into clean jars and cork tightly.
    · Serve after 4 days.

    Let me share with you the recipe of Mint Chutney.

    MINT CHUTNEY RECIPE


    Ingredients:

    1 bunch fresh mint leaves
    2 green chillies
    1 tbsp tamarind pulp
    Salt To Taste
    little water


    How to make mint (pudina) chutney :

    · To make tamarind pulp soak little tamarind in water and keep aside for 2 hours.
    · Then strain the mixture in a bowl with the help of a spoon. To make tamarind juice add little water to the pulp.
    · These days ready made pulp is available in the market. Wash the mint leaves well.
    · Grind it to a smooth paste with green chillies, salt and tamarind juice.
    · You can add water if the mixture is thick.

    I loved your recipe of Khajoor Chutney! I made it for lunch, yesterday. It was YummY!!!

    Let me share with you the recipe of Kale Chane Ka Kabab!

    Ingredients:

    1/2 cup brown chickpeas (kale chane)
    2 cloves (laung)
    4 black pepper (kali mirch)
    1 piece cinnamon (dal chini)
    2 garlic buds (lahsun)
    2 tbsp split Bengal gram lentil (chane ki dal)
    1/2 tsp salt (namak)
    a piece ginger (adrak)
    2 bread piece
    1/2 cup refined flour (maida)
    2 whole red chilly (lal mirch)
    oil for frying


    How to make kale chane ka kabab :

    · Soak bengal gram lentil and brown chickpeas for 2 hours.
    · Now cook bengal gram lentil, chickpeas, cloves, black pepper powder, ginger, garlic buds and 1 cup water in a pressure cooker.
    · Water should dry up completely.
    · When it cools then grind it in a mixer.
    · Soak bread and press with both the hands to retain water.
    · Grind it with chickpeas in a mixer.
    · Make kababs of the mixture.
    · Make a thick thickened milk batter.
    · Coat kababs in this batter.
    · Heat oil in a pan and deep fry all kababs in it.
    · Serve them hot.

    I have learned a Dal from my Parsi neighbour. Here is the recipe!!




    PARSI DAL


    Ingredients:

    1 cup Split Red Lentil (Masoor Dal)
    a pinch of Turmeric Powder (Haldi)
    2 chopped Green Chilli (Hari mirch)
    2 flakes chopped Garlic (Lasan / Lahsun)
    2 tblsp Clarified Butter (Ghee)
    Salt to taste
    1 tblsp chopped Coriander Leaves (Dhania Patta)
    1 tsp Cumin Seeds (Jeera)


    How to make parsi dal:

    · Cook the dal with the turmeric powder and sufficient water in a pressure cooker.
    · Cook till the dal is cooked.
    · Remove from the flame.
    · Mash the dal with a wooden spoon. keep aside in a pan.
    · Heat the ghee in a pan.
    · Add the garlic,salt, green chillies and the cumin seeds.
    · Fry for a minute over a low flame and pour over the dal.
    · Return the dal to a low flame.
    · Add a little water if required(the dal should have the consistency of sambhar) and cook for 2 minutes. remove from the flame.
    · Serve hot garnished with the corriander leaves.

    It is raining outside. Your kids and dear husband are pestering you for a snack. This is a handy snack idea made entirely out of green peas.

    Ingredients: Green Peas 500 gms

    Method:

    Shell the green peas. Take a karahi. Add one or two tablespoons of refined oil. Next pour the shelled green peas into the karahi. Add one or two cut green chillies. Add salt to taste. Keep the flame to simmer and cover the karahi. Keep stirring till all the peas are evenly cooked. Garnish with black pepper before serving.

    The snack tastes just right with rotis or puris.
