Eggplant pizza is very colourful and tastes yummy! Ingredients Black brinjal / Eggplant - 1 big Olive oil - 5-6 tbsp White vinegar - 2-3 tbsp Maida - 1/2 cup Pepper powder - 2-3 tsp Green capsicum - 1 small finely chopped Red capsicum - 1 small finely chopped Sweet corn - 1/4 cup Black Olives - Few Onion - 1 finely chopped Tomato ketchup/ pizza sauce Turmeric - 1/2 tsp Red chilli powder - 1/2 tsp Oregano - 1/4 tsp Thyme - 1/4 tsp Basil - 1/4 tsp Shredded cheese - 1/4 cup Method Cut the eggplant roundly into 1/2 inch thickness. Soak this in salt water for 5 minutes. Wipe all the excess water from the eggplant . Take a small bowl and add olive oil, vinegar, little pepper powder and little salt and mix it . Dip both side of eggplant pieces into this mixture. Now take a bowl add maida , turmeric , pepper powder , salt , red chilli powder and mix well and dip both the sides of eggplant pieces into this mixture one by one. Fry both the sides on tawa until 2 min or light brown and keep aside . For topping take a bowl add capsicum , onion, corn , olives , salt , basil , thyme, oregano and mix well. Apply tomato ketchup for all the pieces and top it with the above mixture. Add shredded cheese on top of it and place it in a prebaked oven of 230 degrees for around 5- 10 min. Note Instead of oven you can directly heat this on tawa until all the cheese starts melting .
